Ingredients

  • Cauliflower

    Cauliflower

  • Butter

    Butter

  • Heavy Cream

    Heavy Cream

  • Garlic

Recipe Steps

  • Step 1

    Chop your cauliflower into florets, if necessary. Place it in a pot and cover with water.

    Bring the pot of cauliflower to a boil and cook the veggies until they are soft and break apart easily - about 20 minutes. Drain the water, and stir in the butter. It’s okay if the cauliflower starts to crumble.

    Transfer the cauliflower to a food processor. Combine the cream, garlic, salt, and pepper in the processor until the cauliflower is creamy and smooth.

    Serve hot with chopped parsley and enjoy!

    Really good! I added a bit more salt and an extra half tablespoon of heavy cream to make it creamier.

            This was my first food on Keto. It turned out really well! we had it with the Italian Meatloaf then used the leftovers for shepherd's pie. Will make it again soon.

                I don't understand why this is tagged as dairy free when it has butter, cream, and optional cheese. Yes, I can use substitutes, but then the nutritional values are useless.

                  Turned out really amazing. I think next time I’ll roast the garlic first and I really must get a full pound, I was shy by 4 oz and I need full size food processor.

                      Would this work using Creme Fraiche instead of cream (can’t do cream)? Thought I would have my salmon fillet on top for dinner tonight.

                        Crème Fraiche and cream can be used interchangeably, no issue.

                      I made this recipe to top the shepherds pie recipe, and it was really good! I use garlic powder instead of fresh garlic.

                          I always make this with the frozen bags of cauliflower rice. I just sauté it until all the water cooks out and then proceed with blending everything together. Soooo good, have made this countless times. Mashed potatoes, who?

                                    I don't think you can make Cauliflower Mash without using cauliflower. You might be surprised by trying it made like mashed potatoes. I sometimes add some cream cheese to it, too. That makes it pretty tasty.

                                    The cauliflower must be almost dry before you mash it. The water is what smells and taste too strong. I cook the cauli around noon and let it drain all day....then my husband likes it!

                                    If you want to correct the macro, add the cheese as a separate food to your meal :) hope it helps
