Ingredients

  • Capicola

    Capicola

  • Mozzarella Cheese

    Mozzarella Cheese

    4 slice- each 3/4 ounce

  • Avocado, Black Skin, California Type

    Avocado, Black Skin, California Type

    2 ounce

  • Basil, Dried

    Basil, Dried

    ¼ teaspoon

  • Step 1

    Preheat an oven to 375 degrees and line a sheet tray with parchment paper. Create ½-oz portions of capicola by overlapping 2 thin slices on top of each other (8 slices total for 4 rollups). Lay a slice of cheese on top of each portion. Then, arrange a ½-oz avocado slice on one end of each portion as pictured. Top with a sprinkle of dried basil.

    Bake the tray for 5 minutes. Allow the portions to cool for 1-2 minutes before gently rolling up the end with the avocado to create the rollups. Serve warm while the cheese is still melted.

    Capicola is salty on its own and in my opinion 1 slice is sufficient for this recipe. Aside from the excessive salt taste it was nice, quick to make and satisfying for a light dinner. I also used fresh mozzarella and sliced myself rather than using pre-sliced.
