Ingredients

  • Skinless Chicken Thigh

Recipe Steps

  • Step 1

    Heat a tablespoon of olive oil in a large pan. Add the chicken thighs and brown on all sides. Remove from the pan and set aside.

    Heat the remaining oil in the same pan over a low/medium heat. Dice the shallot and slice the garlic and add to the pan. Tear in the anchovy fillets and stir until melted.

    Add the thyme and oregano to the pan along with the tomato puree and balsamic. Dice the tomato and add to the pan, stirring everything together.

    Return the chicken pieces to the pan, coating in the sauce.

    Add the hot chicken stock, season generously and stir well.

    Bring the sauce to the boil, then reduce to a simmer so that it is bubbling gently. Cover and cook for 30 minutes.
  • Step 7

    Remove the lid and add the olives, cook uncovered for a further 15 minutes until the sauce is rich and thick and the chicken is cooked through.

    Scatter with fresh basil to serve.

    Great recipe for a new Keto’er. No anchovies and used some tomato sauce as I didn’t want to open a new can for so little. Wife moved it too!

      A big favourite. Always omit anchovies and add different vegetables, keeping Keto in mind.

      Delicious, but no anchovies, substituted chicken broth for Knorr Chicken Stock Pot - not gluten free. I don't know how to edit recipe.

        You can edit any recipe by adding it to your foods. then access it through there and edit

        I used skinless chicken breasts as I had them on hand. I don’t like anchovies but used then anyway; so glad I did. Very pleasant taste and not at all fishy when cooked as recipe states. I cut the breast up in chunks after it finished cooking and prior to adding the black olives. This is hearty & delicious!! I ate it on 3 consecutive days. My boyfriend who isn’t on Keto, ate it with white rice and loved it.

          I used 2lbs raw boneless skinless chicken thighs for 4 servings. I found the sauce reduced really fast and I wasn't able to cook the chicken much more after adding the olives. I also added the fresh basil into the sauce because I'm not really into garnishes. But it was super yummy!

              I made this tonight. It was really good. I didn’t have any anchovies so I had to leave them out. The balsamic vinegar really adds a nice flavour and I love olives. Will make this again.
