Step 1
Preheat an oven to 375 degrees. In a large mixing bowl, mix together the ground turkey, salt, pepper, onion powder, oregano, basil, parsley, and mayo.Step 2
Form the mixture into approx. 16 meatballs and place on a well seasoned sheet tray or a tray lined with parchment paper. Bake the tray for 30 min, no rotating.Step 3
Set the meatballs aside to cool. Prepare 2 medium zucchinis by slicing away the ends and slicing each one in half lengthwise. Use a spoon to scoop out the centers, leaving hollow space to serve as the “sub” part of this recipe. Sprinkle the insides with salt and pepper.Step 4
Spread about 1 TB of marinara sauce across the hollow portion of each zucchini halve. Set the zucchini halves on a sheet tray and bake for 8 minutes. Then, pull the zucchini out of the oven, arrange 4 meatballs in each zucchini halve, and sprinkle about 1 TB parmesan cheese across each row of meatballs.Step 5
Bake the tray for an additional 6 minutes to reheat the meatballs and melt the cheese.

I Spiralized the zucchini instead. Yummm
