Keto Romano Cauliflower Mash

Making cauliflower mash at home is not difficult and it freezes really well, so make a large batch and freeze it in separate containers. This mash has a rich and tangy flavor thanks to the romano cheese. Feel free to use any cheese you like too. I think blue cheese, fontina and parm would all be delicious. Pair this with a perfectly roasted salmon fillet or garlic lemon shrimp!

Ingredients

  • Cauliflower

  • Step 1

    Set a large pot of water on the stove and bring to a boil. Once at a boil, add 2 teaspoons of kosher salt. In the meantime, roughly chop cauliflower into large pieces. Add cauliflower to boiling water and boil for 10-12 minutes until it is soft enough to be pierced with a knife.

    Drain cauliflower into a colander.

    Place cauliflower into a food processor with shaved romano cheese, ½ teaspoon salt and salted butter. Puree until very smooth. Add ¼ cup of sour cream and pulse a few more times.

    Top finished mash with chives, extra cheese and black pepper!

                        Absolutely delicious!!! I made mine slightly differently. Blitzed the cauliflower in the food processor & microwaved for 8 minutes, then added everything, stirred & served. I used basil instead of chives as that’s what I had. Delicious!!!!

                            I'm finally sold on cauliflower! This recipe did it for me...it was totally delish! Even my teenager loved it and encouraged me to add minced garlic. This goes into rotation!
