  • Pumpkin Seeds

    Pumpkin Seeds

    1 tablespoon, whole pieces

  • Avocado

    Avocado

    ½ each

  • Red Onion

    ¼ medium - 2 1/2" diameter

  • Step 1

    Heat a tablespoon of olive oil in a frying pan over a medium/high heat. Add the mackerel and fry for 3-4 minutes until golden. Flip and cook for a further 1-2 minutes or until the fish is completely cooked through. Flake the fish into bite sized pieces and set aside.

    Add the spinach to a salad bowl. Dice the tomato, avocado and onion. Add to the bowl with the spinach and toss to combine.

    Add the flaked mackerel, lime juice, remaining olive oil, salt and pepper. Toss well to combine.

    Scatter with the pumpkin seeds to serve.

      Think you’re right. Protein should be much higher like 25g.

    I'm not a fan of mackerel, is there another fish that could be substituted?

      I would think any fish would be fine. Oily fish like salmon or trout would work nicely. Both are available smoked, but avoid those varieties that use excess sugar in the marinade.

      Sardines are even healthier. And come in cans with olive oil that can be dumped over the spinach salad. King Oscar Wild Caught Sardines in EVOO and Cracked Pepper w/ skin are my go to, especially before a long fast.

      Will deffo make this again. Made a couple of changes. Grilled the mackerel, added sliced kalamata olives and steamed tenderstem broccoli, substituted onion for spring onions and oil for avocado oil. Tasty and nutritious 👍🏼
