Keto Microwave Pepperoni Pizza

Our Keto Microwave Pepperoni Pizza is the perfect kid-friendly Keto microwave meal! You will love that this recipe uses minimal ingredients and is easy to make. We started with a Low Carb and Keto crust made using almond flour and psyllium husk powder to make the pizza. You will love the soft, bread-like texture if you haven’t had a dough like this before. The crust is “baked” in the microwave until puffed. Next, tomato sauce is spread on top of the pizza crust. The pizza is topped with mozzarella cheese and diced pepperoni slices. The pizza is cooked in the microwave for the final time to melt the cheese. The result is delicious pizza with a gooey cheese pull!

How to use this as a base recipe

Feel free to use this recipe as a base recipe for other topping variations. The microwave pizza can be topped with a variety of different toppings like ground hamburger, sliced black olives, banana peppers, feta cheese, and more. If you want to use a nightshade-free sauce, you can use an alfredo sauce.

What is the best type of cheese for this recipe?

When we think of pizza, we think of mozzarella cheese! However, you can use a variety of cheeses (think Pepper Jack or Mexican-style). If you are a big fan of goat cheese, that would also be delicious. Sliced mozzarella would also be great in place of grated.

What is the best dish to cook this in?

We used a 1 ½ quart round casserole dish with tall sides and a bottom about 6” across. Using a dish like this allows the crust to rise in the oven with plenty of space and keeps it in a disk shape. It also makes it easier to remove from the microwave.

    Add the almond flour, psyllium husk powder, kosher salt, egg, apple cider vinegar, and baking powder to the bowl. Mix well to combine, ensuring that all the egg is incorporated.

    Next, add the boiling water and mix well. The dough should have a smooth consistency. Remove the dough from the mixing bowl and press into a round casserole dish.

    Cook the crust in the microwave on high for 1 minute. Feel free to add an additional minute if the dough is too soft or doughy. The dough should be soft but not wet when cooked.

    Spread the sauce evenly over the top of the crust to the edges. Top with the shredded cheese. If using larger pepperoni, dice it into small pieces, so there is pepperoni in every bite. You can also use mini pepperoni.

    Microwave on high for another minute to melt the cheese. Add an additional 30 seconds if necessary. Allow cooling slightly before serving, especially if serving to children.

    Really really good. Crust has a bit of sweetness that totally works. I did add white pepper, Italian seasoning and 2tsp basil olive oil. I added 2 mins in microwave for the crust and about the same for the whole pizza. I’m going to make this on Sundays for weekday lunches. Just a note that 1/4 recipe is for me not enough, 1:3 was pretty good.
