Keto Vietnamese Shrimp and Zucchini
The combo of shrimp and zucchini is so refreshing and perfect for the summertime when zucchini is in season. This meal comes together quite simply as long as you defrost shrimp ahead of time which can be done in 15 minutes by running cool water on a bowl of frozen shrimp. Then of course the zucchini is easy to chop. Everything is stir-fried together and is great served with cauliflower rice. Be sure to use a fish sauce that has no sugar added.

Ingredients
Zucchini
1-½ pound
Shrimp, Cooked From Fresh
1 pound
Garlic
1 clove
Avocado Oil
1 tablespoon
100% Pure First Press Extra Virgin Fish Sauce by Red Boat
2 tbsp
Coarse Kosher Salt by Morton
1 tsp

Step 1
If using frozen shrimp, place them in a large bowl and run cool water over them until they are thawed, this should take about 15 minutes. In the meantime, cut the zucchini in half the long way and then cut each half into half moon slices about ½” thick.Step 2
In a large and heavy bottomed pot, heat the pot over medium-high heat until hot. Add the oil and heat until shimmering, about a few seconds. Add the garlic and then the zucchini. Cook the zucchini until halfway cooked about 7-9 minutes. Be sure to stir zucchini around as it is cooking so it will cook evenly and add half of the salt. Once zucchini is halfway cooked then add the fish sauce.Step 3
Add the shrimp and the rest of the salt and fish sauce and cook until cooked through and pink about 5-7 minutes, stirring every minute or so.Step 4
Taste and add more fish sauce or salt as you desire.

Recipe is easy and tasty. I too cut the fish sauce and used Tamari. Added a little chili paste and ginger for kick and doubled the zucchini since it seamed to really Cook down.

Loved this and my daughter did as well. Didn’t have fish sauce so used low sodium soy sauce and it turned out great.

One of my favorites so far. I substituted zucchini noodles and I’m so glad I did (measured to equal g). I also made a few other adjustments: I opted for one part Tamari and one part red boat fish sauce rather than 2 TBS of fish sauce. I also added fresh ginger to the pan and tossed in a generous amount of cilantro in the last few minutes. If I had any scallions I would have thrown those in as well. This was a banger and I will definitely be making it again.

Another top banana recipe from Carb Manager. I want sure about this. I just needed a meal that would bump up my proteins and use up my glut of courgettes. The result Amazing! This will now be a regular feature to my Keto diet. I love it just as it is, but if you like to add other flavours and spices go do it. It’s easy, quick and delicious. What’s not to love. 🍤

Order it online. Try Red Boat, it’s a little pricey but superior in flavour
