Preheat a large non-stick skillet over medium heat. Add the eggs, almond milk, and vanilla extract to a medium bowl. Whisk to incorporate to form a uniform liquid mixture fully.Step 2

Very tasty pancakes. The batter was very thick - no pouring into the pan for sure. But they cooked up nice and made for a hearty breakfast.
