Keto Pepperoni Sourdough Pizza

You will love these Keto sourdough pizzas made using a homemade cauliflower crust. Fresh cauliflower is processed in a food processor until finely chopped. Then it is combined with eggs, mozzarella cheese, and apple cider vinegar. The crust is formed into a circle and baked until nicely golden brown. Then, the toppings are added, including tomato sauce, mozzarella cheese, and pepperoni, to make a delicious pepperoni sourdough pizza.

Why does this recipe use apple cider vinegar?

Since sourdough bread requires wheat, which is avoided on the Keto diet, we have used apple cider vinegar to achieve the sour taste. Apple cider vinegar with the “mother” is considered to have many health benefits and is delicious in this crust.

Can I use this as a base recipe?

Yes! Feel free to add on as many different kinds of toppings to the pizza. The trick is keeping the sauce and toppings light, as heavy amounts of topping make the crust soggy.

Does this pizza freeze well?

Yes, this pizza will freeze well after it has been baked. Once baked, the slices can be placed in a single layer in a ziplock bag. They can also be frozen in a single layer on a baking sheet and then placed into a ziplock bag. Doing so will prevent any sticking. You can cook them in an oven or an air fryer to reheat them.

Is sourdough bread Keto-friendly?

Traditional sourdough bread made using wheat flour is not Keto-friendly. So we have mimicked the flavors of sourdough using apple cider vinegar in the crust to give it a lovely tartness that is complimentary to the pepperoni and cheese on the pizza.

  • Step 1

    Preheat the oven to 450 F. Line a baking sheet with parchment paper. Trim the leaves off of the cauliflower head. Cut the cauliflower in half and remove the core. Cut the cauliflower halves into florets. Place them into a food processor. Pulse the cauliflower well until very fine.

    Combine the cauliflower, 2 cups of mozzarella cheese, apple cider vinegar, and eggs into a large mixing bowl. Mix well to combine. Be sure to use freshly processed cauliflower, as frozen cauliflower rice from the store tends to be very watery and will affect the texture and consistency of the dough.

    Place the mixture onto the parchment-lined baking sheet. Form it into a large circle about ¼” thick. Be sure that there are no holes made in the crust during this process. If there is, then gently move the cauliflower back together to fill it.

    Bake for 15-18 minutes (the longer, the better if not too browned). Top the crust with the sauce, remaining mozzarella cheese, and pepperoni. Bake for another 5-10 minutes to melt and brown the toppings.

    Add as much time to the baking as possible without burning the crust. Doing so will help to crisp the crust as much as possible. Allow cooling slightly, then cut into eight slices.

      The apple cider vinegar is there,you use it when you make the dough

    I used 2 cups frozen cauliflower rice. Let it thaw on paper towel to soak up any water. Then I ground it up more. I skipped using the cider and sauce. I only used a cup of mozzarella in the crust and the two eggs and added garlic powder. It was a little juicy when I made it into a crust on the parchment paper but still cooked nice after 20min at 450. I thinly sliced tomatoes salt and peppered them and put them down before the pepperoni. Then used one other cup of cheese over the top. Another 10 min in the oven and it was so yummy!!
