Keto Squash Antipasto
If you are getting bored of ways to eat squash on a Low Carb diet, this Keto Squash Antipasto is a great way to mix it up. Tender, sweet, sliced delicata squash is roasted with plenty of salt and olive oil. It is arranged on a wooden platter with blue cheese, feta cheese, salami, radishes, and bright, green olives. The sweetness of the squash pairs so well with the salty cheese, meat, and olives.
What kind of salami should I use?
Feel free to use your favorite salami! The one shown in the picture is an uncured fennel salami, but there are so many varieties to choose from.
How do I know when the squash is done roasting?
Depending on how thick you cut the squash, it can take longer or shorter in time. The key things to look for are browned edges and squash should be fork tender.
What other kinds of cheese can I serve with this?
Get creative! Feel free to serve the squash with brie, sharp cheddar, or smoked provolone.

Squash Delicata

Extra virgin olive oil

Coarse Kosher Salt
0.5 tsp
Roquefort cheese

2 large - 1" to 1 1/4" diameter
Green olives
0.5 cup, sliced

Step 1
Preheat an oven to 400 F. Slice the delicata squash in half lengthwise then remove the seeds using a spoon. Slice the squash into ⅓” thick slices. Place the squash slices on a parchment-lined baking sheet and drizzle with the olive oil and ½ tsp kosher salt. Place the squash into the oven and bake for 20 minutes or so. Look for the squash to be fork tender and browned on the edges (do not go by the cooking time alone)!Step 2
While the squash is roasting, prepare the cheeses by placing them into small ramekins. Slice the radishes into quarters and place the olives in a small bowl. Place the ramekins of cheese on the board first and surround each one with the salami evenly divided. Evenly divide the radishes up as well. Sprinkle the radishes with some sea salt. Leave a space down the middle of the board for the squash. Once browned, place the squash down the center of the board. Serve immediately. The squash is also good chilled so feel free to cook the squash ahead of time and chill it before serving.
