This Keto sandwich is made with quick microwave bread and layered with grilled halloumi, a perfectly fried egg, crispy lettuce, a tomato slice, and a smear of mayonnaise. It makes for a satiating meal to fuel your morning or a leisurely lunch to beat the afternoon slump.

Can you replace the halloumi with another cheese?

Halloumi is a magical cheese that you can fry/grill until soft and melty on the inside and crispy on the outside. If you still want to grill/fry your cheese, you can use other high-melt cheeses like paneer, queso para frier, or tofu if you’re vegan. Otherwise, feel free to replace the halloumi with mozzarella, cheddar, feta, or any other cheese.

How to make this Keto bread?

Instead of opting for processed store-bought Keto bread, prepare this quick and healthy microwave bread. Whisk melted butter, an egg, almond flour, baking powder, and salt in a mug. Microwave for 80-90 seconds until firm and cooked through. You can use it immediately or store it in a sealed bag/container in the fridge for 3 days. When ready to eat, slice it in half and toast the slices in a tablespoon of butter in a pan. You can use this bread in any sandwich recipe you prefer.

    To a straight-edged mug, add the butter. Heat in the microwave for 20 seconds until melted. Add the almond flour, baking powder, the egg, and 1/8 tsp salt. Whisk until combined.

    Microwave for 90 seconds. Remove from the microwave and let cool slightly. Slice it in half and set it aside. Meanwhile, slice the halloumi into 2.

    Add the oil to a nonstick pan and place a round egg mold. Crack the egg in the hole and season with a pinch of salt and pepper. Place the halloumi slices next to the egg.

    Cook the egg for 2-3 minutes until the whites are cooked and the yolks are still runny. Flip the halloumi after one minute, and cook until both sides are crispy. Remove the egg and halloumi slices from the pan and transfer them to a plate.

    Place the bread slices on the pan and toast them for a minute or two until golden. Take the bread off the pan and place it on a plate.

    Add a lettuce leaf to one slice of bread. Add the tomato slice, halloumi slices, then the fried egg. Top with another lettuce leaf and the second bread slice.

      Really delicious. I replaced the cheese with havarti since that’s what I had on hand. Sauteed some spinach instead of lettuce. Great recipe!

                                You can try replacing 1 cup of almond flour with ½ cup coconut flour + ½ cup wheat flour for a nut-free option. Coconut flour absorbs moisture quicker than almost any other flour. Therefore, you may need to add more moisture to your batter or dough if it seems too dry. Another option is to use an extra egg. Hope this helps.

                                    Just wanted to give an update that by adding 3 more tbsp of almond flour, biscuit comes out fluffier and does not taste eggy. Experimented on the biscuit recipe earlier today.

                                  Very tasty. Substituted cheddar for halloumi as I didn't have the halloumi. This "biscuit" really puffs up in the mug. It doesn't stick. Next time I make it I will try to find a much wider based mug or flat sided bowl.
