Keto Paleo Bacon Spinach Egg Cups

Breakfast, lunch, or snack: this easy paleo recipe is great for a low carb diet. Carb Manager has many egg cup recipes to choose from in the recipe library, but few fit the paleo diet. These egg cups are made with a bunch of diced bacon and some fresh spinach. The egg filling is made with almond milk and just a couple of simple seasonings. You can alter the flavors or add more to the egg cups as you see fit within your diet. Use this recipe for any Keto meal prepping. The egg cups will last for up to 5 days in your refrigerator. Just make sure they are fully cooled before storing them in an airtight container to avoid excess moisture spoiling your recipe.

What is paleo?

The paleo diet (also known as the “caveman” diet) is made up of foods believed to be eaten in the Paleolithic era. An easier way to understand the paleo diet is to know it consists of minimally or unprocessed foods. Dairy is the main exclusion on the paleo diet as are many processed items.

Paleo on the Keto diet

In some ways, paleo and Keto diets go together very well. If you are eating both paleo and Keto, expect to eat many cuts of meat as well as eggs. Most of your fats will come from healthy cooking oils, salmon, avocado, nuts and seeds. You’ll have to cut out all dairy and cheese products.

Food substitutions on the paleo diet

You CAN use nut butter and nut milk on the paleo diet. Nut butter is simply made by grinding nuts down in a powerful blender, and nut milk is the liquid extracted from pressed nuts, so neither is considered over-processed. You can also make plant-based cheese from nuts! If you’re missing dairy and cheese flavors, you can add nutritional yeast to your food as well.

Recipe Steps

  • Step 1

    Turn on an oven to preheat to 350 F (180 C) and spray a 6-count muffin tray with pan spray. Dice the bacon and add the pieces to a skillet on the stove. Cook the bacon until it’s very crispy so the bacon doesn’t release too much fat later in the oven.

    Use a slotted spoon to distribute the bacon into the muffin cups. Leave the grease in the pan and return it to the stove. Add spinach to the pan and wilt the spinach over low heat until the it is totally cooked down and has soaked up a lot of the bacon fat.

    Distribute the spinach on top of the bacon in the muffin cups. Whisk together eggs, almond milk, and seasonings in a large measuring cup. Pour the egg mixture into the muffin cups, filling them all the way to the top.

    Bake the muffin cups in your oven for approximately 22 minutes or until the egg cups are cooked through. Look for light golden tops and slightly darker golden sides and edges. Let the egg cups cool for 5 minutes and rest before removing them for serving.

    I wasn’t fond of these. Kind of tasteless and I didn’t like the texture. I filled the muffin cups to the top like the recipe said and the eggs overflowed spilling over. Then they sunk in and dropped while cooling. Reminded me of a soufflé
