Keto Turkey Swiss Chicken Thighs
This main dish course will taste delicious alongside a keto loaded mashed ‘potato’ or vegetable roasted with olive oil. Juicy chicken thighs are filled with a slice of turkey and gobs of melted swiss cheese. Plenty of black pepper rounds out all the saltiness of this dish.

Chicken Thigh, Skin Removed Before Cooking
10 ounce
Salt
¼ teaspoon
Black Pepper, Ground
¼ teaspoon
Garlic Powder
¼ teaspoon
Swiss Cheese
4 tablespoon, shredded
Turkey
2 slice - each 1 ounce
Salt
¼ teaspoon
Black Pepper, Ground
¼ teaspoon
Olive Oil
½ tablespoon
Swiss Cheese
4 tablespoon, shredded

Step 1
Preheat an oven to 375 degrees. Lay boneless, skinless chicken thighs on a flat surface. Sprinkle the first amounts of salt and pepper, and well as the garlic, over the chicken. Spread the first amount of swiss cheese over the inside of the chicken as well.Step 2
Lay a slice of turkey on top of each chicken thigh. Roll up the chicken thighs and place in a small glass baking dish with the seam side down. You may use toothpicks if necessary to secure the chicken thighs.Step 3
Sprinkle the second amounts of salt and pepper over the chicken. Drizzle the olive oil over as well.Step 4
Bake the dish for 25 min. Arrange the final amount of swiss cheese over the top of the chicken and bake the dish for an additional 20 minutes.

I made this for dinner last night and really liked it a lot! It was easy to assemble and will be added to our meal rotation. I followed the recipe with two exceptions. I used sliced Swiss cheese bc that’s what I had on hand and I made five thighs. One very important point, however, is the baking time was way off. I checked the thighs after 25 minutes and they were right at 165 degrees internally. So, I added the second portion of Swiss cheese and baked for an additional five minutes. Perfect! Delicious, tender and juicy.
