Keto Breakfast Lasagna
This is the best Keto breakfast casserole you’ll ever make. Your “lasagna” is made with a bottom layer of bacon and filled with scrambled egg, pork breakfast sausage, and lots of cheddar cheese. Your breakfast is conveniently all in one dish! It’s quick cooking and quick eating. You don’t have to make this recipe just for meal prepping; it’s also great for a special Sunday breakfast. Keto or not, an entire group or family can enjoy the meal. Leftovers can be kept in an airtight container in your refrigerator for up to 3 days for freshness.

Making this easy Keto breakfast for your meal prep rotation? Make sure the finished lasagna cools entirely before you transfer it to your refrigerator. You can slice the lasagna, leave the slices out to cool in meal prep containers on your countertop, then store them away for the week.
Substituting the breakfast sausage
If you can’t find pork breakfast sausage that is already seasoned, you can substitute it with plain ground pork. You’ll need to season the pork yourself. Aside from salt and pepper, you may want to include garlic powder, onion powder, paprika, or thyme. However, season the pork to your preference.
Other ingredients you can add
This meal already has the perfect Keto macros for your breakfast. However, you could add some other ingredients to the lasagna like a casserole. Some low-carb vegetables you can dice and add to the dish might be mushrooms, zucchini, or bell peppers. You can also substitute the cheese with another flavor you like and the bacon with turkey bacon.

Step 1
Preheat an oven to 375 F (190 C). Spray a 6x6 or another square baking dish with pan spray. Line the baking dish with the strips of raw bacon, overlapping each other slightly to create a stable exterior. If some bacon hangs over the edge of the dish, this is okay.Step 2
In a medium-sized skillet, crack the eggs over medium heat. Stir continually as you add the salt and pepper to the eggs. Keep moving the eggs as they scramble. Once cooked through, create an even layer of scrambled eggs on top of the bacon.Step 3
Wipe the same skillet clean, and return it to medium-high heat. Place the sausage in the pan. Break it up with a spoon or spatula as you cook it. Cook the sausage all the way through until it is golden brown and slightly crispy. Create a layer of cooked breakfast sausage on top of the egg.Step 4
Finally, spread the cheddar cheese over the top of the baking dish in an even layer. If you have any hanging bacon over the edges, fold it over the top of the ingredients. Spread the cheese so it covers any vulnerable edges of bacon.Step 5
Bake the “lasagna” on a low rack, uncovered, in the oven for 45 minutes or until the cheese is very golden brown and the bacon has completely cooked through. Let the dish cool for 5 minutes before slicing for serving. A 6x6 dish makes 4 servings.

I have to try this because it looks GREAT, and 2 total carbs for big piece of that is very do-able! Looking at other comments, I’m wondering if putting the dish in the oven 15 minutes with just the bacon first will fix the uncooked bacon issue. I’m going to try that soon. Will let you know - but I’m pretty sure that will work. Love the idea of a bacon crust on the casserole. Not sure why it has to cook 45 min when all the ingredients are cooked. I’ll try this bacon-crisp-in-pan-first idea, and add raw sausage on top of that after bacon is crisped, raw beaten eggs on top of that and shredded cheddar on top. Same ingredients as this recipe uses, but a lot less work. Will let you know next week how that goes!

Great and simple recipe. I added red pepper flakes, to bump it up a notch. then I put my serving into a pan to crisp the bottom bacon.

After 45 minutes, my bacon was still raw on the bottom and the cheese was brown and hard. Everyone is right to just cook the bacon before and then let the cheese melt. I hope they update this recipe.

This was very delicious, thank you for posting! I found it just a little bit dry (added spinach) so next time will add a dollop of tomato-based pasta sauce or some fresh tomato. (Pre-cooked bacon so only needed 15-20 in oven)

Great ideas I will modify for my particular diet style (following heathy keto per Dr Berg and Dr Ekberg) (Example I will not be using cooking spray I opt for coconut oil) But thanks for the great idea I appreciate the time it took to input all the data hat tip to you Looks absolutely delicious will try this Tuesday

Sounds great but I will definitely partially cook bacon first and blot as well as drain and blot sausage meat. Being dairy free I will use grated Diaya cheese substitute.

Looks really good but instead of bacon I will use Canadian Bacon on the bottom, add 1/2 & 1/2 to eggs, add a few grilled peppers for color, light cheese on top and garnish with green onion tips and parsley with a side of salsa. Could also do deli ham for bottom if you don’t have Canadian bacon.

I have not tried this recipe... what if you cooked and crumbled the bacon, so there is not so much grease! Layer on top of sausage or under the cheese layer! Looks delicious, definitely going to make this.

Pre-cook the bacon at the bottom 1st. Drain the fat off. I used chicken sausage. Next time I’ll do all turkey/chicken. Pork is not for me. It was tasty, but I had to pull the bacon off.

Cooked the bacon before, added an extra egg and added 2oz of cream cheese as I was cooking the sausage. Topped with Fontania and Mild and Sharp Cheddar cheeses (it was a blend I had) - so good!!

Grease and tummy alert! Too much grease and very salty. Had tummy issues too. No salt needed because of the bacon.

This was tasty however a bit too much for my stomach. A short while after eating this I had stomach pain. I wasn’t sure what it could have been so I got some ginger ale and the pain eventually subsided. Day 2 the same thing happened but not as bad. Day 3 I didn’t eat it because I wanted to see if it was indeed this meal and no stomach issues. Again while this dish is tasty, it may be a bit too much on your stomach. Still giving it a 5 due to the ease as well in making this but I will not make it again.

I would say cook all the Ingredients separately first so u can drain off the excess fat then layer and bake a shorter amount of time. It’s probably too much fat for ur digestive system.
