Low Carb Air Fryer Granola is made with wonderfully Keto and Low Carb ingredients. The granola is made mainly with healthy monounsaturated and saturated fats; this granola is filled with unsweetened coconut flakes, sliced almonds, pumpkin seeds, almond butter, avocado oil, and vanilla extract. A small amount of honey is added for flavor. If you are strict about carbs, remove the honey and stick to the sweetener only in this recipe.

Store leftover granola in an airtight glass container. A glass container works best as the granola will not pick up any lingering flavors.

This granola would be great on top of full-fat greek yogurt, or it can be eaten directly.

Recipe Steps

    Combine the unsweetened coconut flakes, sliced almonds, and pumpkin seeds to the bottom of an air fryer with no rack inserted into the bottom.

    Combine the almond butter, avocado oil, vanilla extract, sweetener, and honey in a small bowl.

    Pour the almond butter mixture over the coconut flake mixture and work the almond butter over all the seeds. You may need to use your hands.

    The mixture should look like this after the almond butter is combined well.

    Cook at 325 F for 5 minutes until the top is golden brown.

    Then reduce the heat to 300 F for 5 minutes, stirring occasionally. Add 1-2 minutes to achieve a nice golden brown color.

    Place the granola on a parchment-lined baking sheet and let it cool completely. Store in an airtight container.

        Net carbs are 5.5 g per serving. The 16.8 g per serving is total carbs before you subtract fiber and sugar alcohols.

        You’re not using enough to hurt anything. If you a bunch of honey it’s not keto but the tiny amount used in the totally recipe makes an insignificant difference

      It looks like almonds were duplicated in the recipe which means the macros are off. Just FYI.

        Looks like one of the "almonds" is actually supposed to be pumpkin seeds, based on the recipe description. Good catch!
