Keto Pickled Green Tomatoes

If you home grow tomatoes, you know the plethora of green tomatoes left at the end of the season. Instead of throwing the tomatoes away, use them! This is an excellent Christmas canning jar recipe, and it even has the right combination of colors to make it festive, from the green tomatoes to the bright red chili peppers. Do not worry; the chili peppers are more for color than for spice.

How should I prepare the jars for canning?

The jars should be cleaned and sterilized before filling with tomatoes and pickling liquid. If you plan to eat the tomatoes within a week, you can clean the jars in a dishwasher. If they are going into long time storage in the refrigerator, boil the jars and lids for 10 minutes.

What other flavorings can I add to pickled green tomatoes?

You can add different kinds of peppercorns (black or pink), fresh herbs like dill, parsley, or rosemary. Feel free to add more chili peppers if you want the pickles to have a nice kick of heat. You can get creative with the flavors! Whole clove or allspice would be a nice warm spice that is reminiscent of the holidays.

How should I prepare the tomatoes for the jars?

The tomatoes should be washed very well to remove any dirt and debris. The tomatoes can be cut in a variety of ways. Large tomatoes can be sliced thin or in quarters. The smaller the piece size of the tomatoes, the softer they will become after the pickling liquid is on top, so keep that in mind. I like my tomatoes crunchy, so I will cut them larger (quarters). Small cherry tomatoes can be left whole or cut in half to make them more pretty.

    Wash the green tomatoes thoroughly. Then cut them to roughly the same size, but small enough they will fit inside the canning jars. Use a variety of pint size to quart sized jars for this recipe.

    The prepare the pickling liquid combine the vinegar, water, salt and sweetener together in a medium saucepan. Bring the mixture to a boil.

    In the meantime, pack the jars as tightly as possible with the cut green tomatoes. Be sure to add some chilies and garlic cloves in between the layers of tomato. Feel free to add other herbs and spices to the jars if you would like to.

    Once the pickling liquid is at a boil, pour the hot liquid into a glass measuring cup. Then use the measuring cup to pour the hot liquid into the jars. Fill the jars to the very top making sure to cover the tomatoes completely. Place the lids on the jars and allow the jars to cool at room temperature for an hour. This will help to cook the tomatoes slightly so they are not raw. Place them directly into the refrigerator after an hour. Keep jars stored in the refrigerator until they are ready to serve.
