Low Carb Vegan Pad Thai

Making Keto Thai food is super easy with this recipe! Make this vegan pad thai as a side dish to a main meal or add more ingredients to make it a larger dish. Low-carb shirataki noodles are fried in a wok with peppers and green onions. Then, the ingredients are simmered in a yummy pad thai sauce you’ll make with just a handful of ingredients. If you don’t have a wok, a non-stick saute pan will do just fine. Make sure you have all the other ingredients, as they’re crucial to a classic homemade pad thai dish.

Do shirataki noodles have any nutritional value?

Shirataki noodles are used in many recipes on Carb Manager because they’re so low in carbs. They may not add any nutritional value to your meal, but they’re perfect for the Keto diet as a noodle option. Since they typically have zero carbs, you can add other ingredients that provide the nutrition you need.

Make it a meal

Turn your Keto-friendly Thai food from a side dish to the main course. For vegan protein, it’s recommended you add tofu to your pad thai. However, you could also add a low-carb vegan meat alternative that you enjoy. Make the dish less spicy

It’s really simple to make this pad thai dish less spicy. Simply omit the chili sauce from the pad thai sauce. No other spices are added to the dish. You could also substitute the chili sauce with your favorite type, like Sriracha, to please your palate. Combat some of the heat with liquid stevia, which adds zero carbs to your meal. Use it sparingly, as one drop of liquid stevia is extremely sweet.

    Combine soy sauce, sesame oil, rice vinegar, chili sauce, peanut butter, brown sugar substitute, and liquid stevia in a small bowl. The peanut butter just needs to be broken up in the sauce instead of completely whisked in. Set the pad thai sauce near your stove for later.

    Thinly slice or julienne red bell pepper, and chop the green onion. Begin heating sesame oil in a wok or non-stick saute pan over high heat. Once the oil is smoking, add the peppers and onion, and cook them down until the peppers start turning golden.

    Drain your shirataki noodles. Move the peppers and onion in your pan to the edges, and add the shirataki noodles to the center. Cook the shirataki noodles over high heat until they dry up a little and start frying to golden.

    Once the noodles are golden, pour the pad thai sauce into the wok or pan. Keep the heat high while the sauce bubbles and reduces. The noodles will absorb some of the sauce and fry more.

    Once the noodles and sauce are at the right texture, take your pan off the heat. Stir in chopped cilantro and peanuts to complete the dish. Serve hot.

    This was ABSOLUTELY incredible....i add some shitaki mushrooms and I diced into bite size chunks ahi tuna and threw it in right at the end before serving so it wasn't perfectly raw and oooooomg.. ..divine
