You will love this Keto microwave meal that combines some of the best breakfast items: eggs and bacon! Pasture-raised eggs are poached in boiling water in the microwave until the whites are perfectly cooked, but the yolks are runny. This method of cooking eggs in the microwave might be revolutionary to those who love a runny egg but struggle with having the time (or skills) to poach eggs on the stovetop. The poached eggs are drained on paper towels and served with crisp microwaved bacon and freshly sliced ripe avocado sprinkled with sea salt.

You may need to play with the amount of time your poached egg takes to cook in your microwave. In this recipe, our microwave cooked the eggs within 30 seconds, adding an additional 15 seconds. You may need a little more or less time depending on your microwave. We recommend starting with 30 seconds at first and then adding time in 15-second increments.

  • Step 1

    Place the sheet of bacon onto a large microwave-safe plate. Cook according to package directions. We used thin precooked bacon, so the time it took to cook in the microwave was 1 ½ minute, and then we added another 15 seconds to ensure the bacon was crisp. Add another 15 seconds at a time as is necessary to make the bacon crispy.

    Crack one egg into a small ramekin. Add 8 oz boiling water to a 12 oz coffee cup. Add in one tsp of white vinegar. Slowly and gently tip the egg from the ramekin into the boiling water—microwave on high for 30 seconds.

    Remove the coffee cup from the microwave. Flip the egg over gently with a spoon. Depending on your microwave you may be able to skip this step and still have an egg that is cooked through evenly.

    Cook for another 15 seconds on high. Remove the egg onto a paper towel-lined plate. Repeat with the second egg.

    Serve the poached eggs with the bacon. Cut the avocado in half. Scoop the flesh out using a spoon. You can leave the avocado like this if you are short on time or cut it into slices. Sprinkle the eggs and avocado with sea salt and black pepper to taste.

    It’s Lent so I had to skip the bacon. I added Every But the Bagel Trader Joes seasoning to the avo and a little Cholula Hot sauce. This rocks!

      This was pretty cool. It was pretty quick. I did discover you need to dump the water out of the coffee cup after each poached egg. I put the poached egg in the microwave in the water on 30 second intervals, it came out to one minute per egg, however, if you put an egg in there for one minute they are over cooked, but, if you do it in 30 second intervals and take it out after each interval, it does a whole lot better. Depends on your microwave, I guess. I also didn’t have any ready-cooked bacon on hand, but I did have some MorningStar breakfast strips I called “facon”. They’re quick and easy and I put two strips on a plate for one minute (no grease). I did the avocado, that was yummy, and I added two pieces of multigrain toast by Carb Master with a little butter on each slice. My final take on this was its easy, delicious and nutritious for before going to work when you’re short on time.
