Keto Vegetarian Ricotta Spinach Calzone
This Keto calzone is the highlight of vegetarian Keto recipes. If you are looking for vegetarian Keto dinner recipes, then this Italian recipe is about to become your new favorite! It has a delicious filling and a chewy dough with fewer carbs than traditional calzones. It is the closest thing to pizza you can make but way simpler in ingredients and process.
What to serve with this Keto vegetarian calzone?
Calzones can be enjoyed just as they are; however, they are even better when paired with simple sides. This dish pairs well with simple salads. Since they are baked, when served with refreshing salads such as a cucumber salad, tomato avocado salad, or even spring mix, they make for the perfect combination of flavors and textures. These calzones can also be served with thick, hearty soups for the ideal winter dinner. These calzones can be served with Keto tiramisu or homemade Keto fruit salad for dessert.
How to store these Keto calzones?
There are two ways to store these Keto calzones. You can either store them raw or baked. To store them raw, place the assembled calzones in an airtight container or zip-lock bag in the freezer for 3-4 months. Place pieces of parchment paper between them to prevent them from sticking together. Alternatively, you can freeze the fathead dough in the freezer and then thaw it, roll it, and fill it whenever you are ready to bake. Assembled calzones can be stored in the fridge in an airtight container for 3-4 days. Reheat them in a preheated oven at 180C/350F until hot or in the microwave for about 30 seconds.
What other filling variations can you make for this recipe?
Generally, calzones can be filled with a variety of options! For meat filling, try shredded chicken, bacon, baked meatballs, pepperoni, cooked ground beef, or sautéed spicy sausages. Vegetables such as mushrooms, red peppers, and onions also work well in this Keto vegetarian calzone. Feel free to add a variety of cheeses, such as cheddar cheese, provolone, feta cheese, or even cottage cheese. Lastly, adding sauce to the rolled fathead dough before filling can take your calzones from basic to best. A few sauce options include pesto sauce, alfredo sauce, or barbecue sauce.

Step 1
Preheat your oven to 180C/350F. Grate the mozzarella cheese and mince the garlic. Squeeze the spinach to remove excess moisture. To a mixing bowl, add the spinach, shredded mozzarella cheese, garlic, ricotta cheese, oregano, basil, salt, and black pepper. Mix to combine.Step 2
Roll the dough to ¼ inch thickness. Add the filling to one side of the rolled dough and begin to fold from the edge furthest to you, covering the spinach mixture. Cut off any excess dough to create an even edge.Step 3
Use a fork to gently press down the edge to seal the calzone and cut two slits on top to allow steam to escape. Arrange the assembled calzone onto the lined baking sheet. Bake for 20 minutes until golden brown.Step 4
Garnish with chopped parsley and serve warm. Store any leftover calzone in an airtight container in the fridge for up to 3 days.
