Keto One-Pan Chicken with Tomato Sauce and Mozzarella

These tender chicken breasts with flavorful tomato sauce and melted mozzarella are among our favorite one-pan weeknight recipes. It's a perfect and fuss-free option for the entire family to enjoy, whether on Keto or not. This fantastic dish can be served as it is or along with your favorite Keto-friendly sides, such as mashed cauliflower or fresh vegetable salad. You can adjust the amount of dried herbs according to your taste or experiment with some other herbs or spices of your choice. We added a small amount of sweetener to reduce the bitterness of tomatoes, but this is entirely optional. Serve while fresh and warm, and enjoy!

How to substitute chicken breasts?

You can use chicken thighs or turkey breast instead of chicken breast. You will just have to adjust the cooking time accordingly.

Serving suggestions

This wonderful dish pairs perfectly with mashed cauliflower, various baked or grilled low-carb veggies, or fresh vegetable salad. You can also serve it with a dollop of Greek yogurt or sour cream.

Can I prepare this dish in advance?

You can prepare this dish in advance and store it in the fridge until ready to serve. However, add the cheese right before serving and allow it to melt while reheating it (you want mozzarella to be perfectly melted).

    Heat one tablespoon of olive oil in a large pan over medium heat. Add the chicken breast and cook for 8-10 minutes. Turn each piece over and continue to cook for another 5-6 minutes.

    Slice the spring onion. Add to the pan and reduce the heat to medium-low. Continue to cook for another 2-3 minutes.

    Add the tomatoes, oregano, dried dill, and granulated sweetener. Mix well and cook for 12-15 minutes over medium-low heat. Taste and optionally add more sweetener or dried herbs.

    Roughly chop the spinach. Add to the pan and stir well. Cook for 3-4 minutes.

    Shred the mozzarella cheese. Add to the pan and cover with the lid. Cook for 2-3 minutes or until the cheese has melted.

    Remove from the heat. Finely chop the parsley and sprinkle it over the cheese.

    Transfer to serving plates. Optionally, season with some more salt or pepper to taste. Serve immediately.
