Step 1
Add butter and olive oil to a large pan and heat up over medium heat. Add the bacon slices and cook until crispy. Remove the bacon from the pan and transfer it to a plate lined with paper towels.Step 2
Pound the chicken breasts until approximately ¼ inch in thickness. Season with salt, ¼ tsp of black pepper, and 1/3 tsp of garlic powder. Place the chicken breasts into a baking dish. Drizzle the bacon fat over the meat and set it aside.Step 3
Add the cream cheese, onion powder, ¼ tsp of garlic powder, chives, and the remaining black pepper to a bowl. Mix to combine. Optionally, add more salt or black pepper to taste.Step 4
Preheat the oven to 175°C (350°F). Spread the cream cheese mixture over the fillets. You can add some more herbs or spices to the cheese mixture.Step 5
Crumble the bacon. Shred the cheese. Top the chicken with shredded cheese and bacon. Bake for 20 minutes.Step 6
