Keto Chicken Brunswick Stew
If you are looking for a warm, comforting stew for the colder months, this Keto Brunswick stew recipe is ideal. It is made with Keto-friendly wholesome ingredients and is so easy to prepare. This chicken stew can be made in under 1 hour and uses easily sourced ingredients. It is also a great meal prep recipe and tastes even better as it sits longer in your fridge.
Can you cook this Keto Brunswick stew in a slow cooker?
Yes. You can make this Keto Brunswick stew in a slow cooker, especially when you have other tasks to handle at once. Simply place the chicken breasts and other ingredients in the slow cooker. Set the cooker on high for 4 hours or low for 7 hours. After the set time, the chicken should be fork tender and all the vegetables cooked through. Use a fork to shred the chicken, then add it to the pot and mix. Serve hot.
What should you serve this Keto stew with?
This Keto Brunswick stew is best enjoyed hot. It can be enjoyed with a side of Keto-friendly bread, low-Carb crackers, or cauliflower rice. It can also be enjoyed as a meal all by itself. It makes for a warm, cozy, and comforting dinner, especially during the cold winter months.
Is this Keto stew meal-prep friendly?
Absolutely! Making a big batch of this Keto stew is a great idea, especially when you have some time to spare in the kitchen. Once done cooking, allow the stew to cool down completely. Then, portion the soup into serving-size air-tight containers or a large container. Transfer the stew to the refrigerator and store it for up to one week. Reheat in the microwave for about 40 seconds or over the stovetop for about 5 minutes before eating. You can also freeze this stew; however, the texture of the vegetables might become soggy during freezing.

I was looking for something hearty and this fits the bill. I used chicken thighs instead of breasts because that is what I had. The only problem was that the ingredient list says ‘kale’ but the directions say ‘spinach ’. I had spinach so that is what I used. I also like it more runny so added more water. This recipe is versatile and you can add vegetables you have on hand. I really loved the spinach and added that at the very end.
