Keto Spanish Churros

One of the most quintessential Spanish foods is churros! We reinvented these to create a Keto diet Spanish recipe that is wonderfully low carb! A Keto pancake mix is used to form the base of the Spanish churros. The dough is placed into a piping bag and then piped into hot oil to fry until golden brown and delicious! Once each churro is browned, they are dunked into granulated low-carb sweetener, so they are sparkly and crunchy on the outside. The churros are paired with the best chocolate ganache for dunking.

What type of sweetener should I use?

Please use granulated erythritol for the outside of the churros, but a powdered erythritol or monk fruit blend for the chocolate ganache.

How long do these last?

The churros should be consumed immediately after frying for the best flavor and texture!

How much oil should I use for frying?

Please use 1 cup of avocado oil for frying. The recipe below only states 1 oz of avocado oil because it reflects the amount of oil pickup for accurate macros.

Recipe Steps

    Combine the Keto pancake mix with water, sweetener, and avocado oil. The mixture should be on the stiffer side. The denser dough is what you want as it will hold up in the frying process.

    Place the dough into a piping bag fitted with a star-shaped piping tip. To fill the bag easier, place the piping tip into the piping bag. Then place the piping bag into a tall glass and fold the plastic over the cup. Fill with the batter and fold the piping bag back over the batter.

    Heat one cup of avocado oil in a small saucepan until the temperature reaches 375 F. Pipe two to three 3”-4” long churros into the hot oil. Rotate and turn the churros to evenly brown them. Then place them onto a paper towel-lined plate.

    Place the hot churros into a bowl of granulated sweetener. Then set them aside to cool slightly. Work quickly during the next step, so the churros are still warm for serving.

    Heat heavy cream in the microwave until hot and bubbly. Add in the dark cocoa powder. Please use a high-quality Dutch-process cocoa powder as it melts nicely. Whisk well until all the chocolate is melted. Add in 4 tbsp sweetener and whisk again. Serve the hot ganache with the warm churros immediately.

      Whoever wrote this recipe must not know what churros are… I followed the recipe word for word, which is extremely confusing by the way, the ingredients list has sugar 3 times, and no mention of frying oil until the instructions. Churros have a crispy outside, fluffy inside, and absorb the sugar and are incredible. These are mushy logs that look like my dog just did his business. I even altered the cooking times and temps, you cannot cook this is any way using a waffle mix without them being godawful tasting mush that is burnt and kinda mushy, or cooked and really mushy.
