Rich in potassium, beta carotene, and Vitamin C, these creamy sweet potatoes are topped with a sweet drizzle of maple syrup and coconut sugar. While you need to think ahead about cooking sweet potatoes in the crock pot, they buy you lots of time by being warm and ready to go when dinner is ready. Simply place the potatoes into the crock pot and allow them to cook until softened. Making sweet potatoes like this is great if you are short on time or meal prepping as they are easy to portion into containers later on.
Topping ideas
Feel free to top plain sweet potatoes with any variety of Paleo-friendly toppings. These toppings could include sliced avocados, jalapenos, bacon, and sliced cherry tomatoes for a savory spin. Fruits like blueberries, strawberries, unsweetened dried cherries along with maple syrup, and any variety of nuts like pepitas, sliced almonds, or walnuts with a sprinkle of cinnamon for a more sweet take.
Tips for recipe success
Try to use three pounds of smaller potatoes so they cook more uniformly. You may also want to turn the potatoes around halfway through the cooking time to ensure proper cooking as well. If the potatoes are on the larger size, they will take the full 10 hours. If they are three pounds of smaller-sized potatoes it could take around 6-8 hours instead.

Step 1
Scrub and rinse the sweet potatoes with a brush to remove any dirt and debris. Do not dry off the potatoes as this residual moisture will help the potatoes to cook. Place the potatoes into the bottom of a Crockpot. Set the cooking time to low for 10 hours.Step 2
Halfway through the cooking process, turn the potatoes over and place the bottom positioned potatoes on top and vice versa. Allow them to continue cooking until they are softened all the way through.Step 3
Turn the oven on to 350 F (180 C). Place the pecans on a sheet tray and toast them for 7-8 minutes. Set them aside to cool slightly.Step 4
Once the potatoes are cooked through and softened, remove them from the Crockpot. Cut open the potatoes and top them with coconut sugar, maple syrup, a pinch of sea salt, and some of the pecans which have been crumbled on top. Serve immediately!
