    Thinly shred the lettuce, dice the red bell pepper, grate the carrots and ginger, and chop the scallions, cilantro, and cashews. In a pan, heat the coconut oil over medium-high heat. Season the chicken with salt, garlic powder, and pepper.

    Add chicken to the pan and cook until browned and the chicken is fully cooked, about 10 minutes. Allow to cool then shred the chicken.

    In a large bowl combine lettuce, red pepper, carrots, scallions, cilantro, and chicken. Make the dressing by whisking together lime juice, fish sauce, ginger, red pepper flakes, and golden syrup. Slowly whisk in olive oil until emulsified.

      No fish sauce. Maybe coconut amino ( like soy sauce), maybe chopped Brazil nuts or pine nuts bc there buttery like cashews. No chicken try beef w some extra spice to it like saracha. Or turkey as is. Or shredded pork. Just ideas.

      You can copy the recipe. Then in your copy you can edit anything. I change the name, ingredients and sometimes add a note for anything I want to remember.

    Fish sauce has a ton of sodium in it. Is there something else I can use that will still ad some flavor without putting my husband into the hospital?

      I use chicken bouillon instead if it’s important. This is just for the dressing. I’d just leave it out and add a bit of water if needed.

      I’m not making golden syrup. That would be dangerous for me. I’d make the dressing without golden syrup or fish sauce (because I don’t have those things in my kitchen). Then if it needs “something”, I’d add one or more of these things: salt, soy sauce, chicken bouillon, liquid stevia or monk fruit.
