Ingredients

  • Radish

  • Butter

  • Step 1

    Trim the tips of the radishes and slice in half. Add to a pan of boiling water and simmer for 5-6 minutes until tender. Drain well.

    Transfer the radishes to a food processor and blend to a rough mash. Transfer the mash to a sieve and squeeze out as much excess liquid as possible.

    Spoon the radish back into the food processor. Add the butter, cream, parsley, garlic, salt and pepper.

    Blend again until you reach your desired mash consistency and heat through if required.

    I added a slight more butter and heavy cream. (Maybe 1/2 T of each.) Also put in about 2oz of shredded sharp cheddar, two strips of crumbled bacon and some hot sauce at the end. Paired it with marinated, grilled spicy shrimp for a shrimp & grits vibe. Very tasty! And my wife, who is not following keto, really liked it.

      Thanks for all the great tips! The sieve did the trick. I had tried without a recipe and it was watery, now they are perfect
