Rich, smooth and creamy, this keto coffee fudge is studded with pecans and a hint of dark chocolate.

The recipe calls for xylitol but this can be substituted for your preferred granulated sweetener.

If you choose to freeze the fudge for quick setting, remove from the freezer 10 minutes before serving to soften a little.

Recipe Steps

  • Step 1

    Add the chocolate pieces to a heat proof bowl along with the coconut oil. Melt together over a double boiler or in the microwave.

    Whisk the instant coffee and xylitol into the hot chocolate mixture until fully combined. Set the mixture aside to cool completely.

    Whilst the mixture is cooling, add the cream cheese and cream to a bowl, whisk together until smooth and fluffy.

    Gently fold the pecans evenly through the cream cheese mixture.

    Once the chocolate mixture is cool, gently fold through the cream cheese intil well combined.

    Line a small freezer proof dish or mould with baking paper – about 3 x 6 inches. Spoon the fudge mixture into the lines mould, smoothing over the surface.

    Transfer to the fridge for a few hours until set, or for speed, freeze for 40 minutes until firm.

    What is missing here is how many squares you would get from this recipe - I would think 8. Doubt I will get an answer as non of the other questions have had a response.

      If the serving size is 2 squares and you set the recipe for 4 servings, cut it into 8 squares. You control how many servings you want to prepare by adjusting that at the beginning of the recipe.

    Good recipe! I did my own adjustments but the base is solid! Personal advices: Xylitol is really never a good choice with keto, I would recommend replacing it with Erythritol. For people outside US/UK, double cream can be obtained (replaced) mixing milk and butter in 3/2 ratio (I tried obtaining something like that using the Alpro 0 Sugar Coconut Milk and regular Butter and the result was a quite good 0 carb heavy cream). If you want to add milk chocolate you can, as long as it's sugar free it won't have huge effects on ketosis. But if you like a bit more customisation, I'll usually go for Cocoa Butter + Cocoa powder whenever I can: the result is awesome and I have almost full control on the final taste and final carb content.

      Good ideas. Thanks for sharing. I’ve always preferred Hershey’s Cocoa Powder for fudge — and it comes in both dark and milk chocolate. I use the dark which is per tablespoon 1carb/10 cals. Navitas Cacao wafers are 6 for 130 cals/zero carbs.

    Would this work with Lilly’s milk chocolate?? I want to make something my kids will like too and they hate dark chocolate 🥴

      Lilly's melts well in microwave. Just do it 8n 30 sec bouts and make sure not to over heat because it will become a hard goop. If you just watch it it's fine.

    Is the serving size 1 square or 2 squares? (I cut into 8 pieces).

      Super easy to make and satisfied my cravings for chocolate! I'm a big fan of cream cheese, too. So this tasted great to me. Substituted Xylitol with Swerve. The tiny serving size was perfect.
