What is Man’oushe?
Also pronounced and spelled as manakeesh or mana’eesh, it is a Middle Eastern thin pizza or flatbread topped with various toppings, the most common being za’atar and olive oil. This meal is usually served for breakfast but can also be consumed for lunch or appetizers. It can be made into small handheld rounds or larger ones the size of a medium pizza. Man’oushe is usually consumed by hand, so you can either roll it into a wrap or slice it into 8 slices.
What is Za’atar?
Za’atar is a classic Middle Eastern spice blend unique for its herbal, earthy, tangy, and salty flavor. It is always mixed with another ingredient, the most common being olive oil or used as a meat or veggie spice rub. Za’atar is a great way to spice up paleo Middle Eastern vegetarian recipes. This spice rub can be found at many stores, but each brand has a different ratio of spices. It is best to buy it from a Middle Eastern food market or make it yourself using this recipe.
What can you substitute dried thyme for?
Za’atar translates to thyme in Arabic. Thus, it’s the main ingredient in this spice blend recipe. If you can’t find thyme, you can opt for oregano, but choose Greek or Turkish rather than Mexican. Either way, you’ll end up with a delicious spice mix for paleo Middle Eastern recipes.

Step 1
First, prepare the zaatar spice blend. In a bowl, mix the thyme, sumac, sesame seeds, and ½ tsp of salt. Whisk in the oil, and set aside.Step 2
To prepare the flatbread, add the almond flour, tapioca flour, and ¼ tsp salt to a bowl. Whisk to combine. Pour the coconut milk and mix until smooth.Step 3
Place a large nonstick pan over medium heat. Once hot, add ½ cup of batter to the skillet. Immediately spread it using a spoon until flat.Step 4
Cook for 2-3 minutes until mostly cooked, then flip. Drop the heat to low and cook for 3 more minutes. Take your time cooking the flatbread without burning it.Step 5
Transfer to a large plate. Repeat with the remaining batter, and place the second flatbread on another plate. Divide the za’atar blend over each flatbread and spread, leaving ½ inch (1 cm) of crust.Step 6
Cut the cherry tomatoes into quarters and the cucumber into half circles. Top the flatbreads with cucumber and cherry tomatoes. Add some fresh mint leaves and serve.
