They are a perfect option for breakfast, brunch, or a snack. Our Keto egg muffins are packed with proteins and fats and are a completely Keto-friendly recipe for the entire family. You can use any sausages of your choice (just make sure they are low-carb). You can also add some more sriracha to taste or a pinch of hot sauce. Serve them directly from the oven and enjoy!

Parmesan cheese, fresh (hard)

Hot chili sauce (Sriracha)

Step 1
Thinly slice the sausages. Heat the olive oil in a large pan over medium heat. Add the sausage and cook for 4-5 minutes, stirring occasionally. Remove from the heat and set aside.Step 2
Shred the cheddar and parmesan. Finely chop the parsley. Crack the eggs into a large bowl. Add the parsley, parmesan, cheddar, and sriracha.Step 3
Whisk well to combine. Depending on the type of sausages you're using, you may need to add some salt or pepper to taste. You can also add some more sriracha sauce.Step 4
Drain the sausages to remove any extra fat. Add to a bowl and mix again. Set aside.Step 5
Preheat the oven to 160°C (320°F). Grease a 6-cup muffin pan with butter. Divide the mixture evenly between the cups.Step 6
Bake for 15-20 minutes. When done, remove from the heat and cool in the pan for 5-10 minutes. Serve immediately. The muffins pair perfectly with some shredded parmesan.

This was good! Due to time constraints I made an omelet instead of muffins. I think I'll add more sriracha.
