Canned Diced Tomatoes & Green Chilies

Beef broth, bouillon or consomme, homemade

Step 1
Place a large heavy-bottomed pot over high heat. Add the beef and cook for 7 minutes until browned. Drain if desired.Step 2
Drop the heat to medium, and add the taco seasoning and 1 cup of broth. Simmer until most of the liquid has evaporated. Add the canned tomato (undrained) and the remaining broth. Stir to incorporate.Step 3
Bring to a boil then drop the heat to low and simmer for 10 minutes. Remove from the heat and let it cool slightly. Stir in the ranch dressing.Step 4
Ladle the soup into 4 bowls. Garnish with your choice of toppings. Serve immediately.

I’m not a huge fan of ranch but thought I’d try it. I think next time I’ll try sour cream instead. If still not right, I probably won’t make it again.

Made this tonight. Did not like it at all. The ranch is the wrong flavor to add in. I would have used sour cream. Threw it all away.

I LOVE this! I added 1/2 cup of water to each leftover portion to decrease the saltiness. It actually made it even better!!

I used the basic taco seasoning, hidden valley ranch and I also put in half a block of Philadelphia cream cheese just to make it a bit creamier.

I was skeptical about it at first but once I tried it omg!!! I recommend to try it! It has a bit of a kick to it so if you are those who don’t like spicy or a hint of it then I suggest trying another option
