Ingredients
Cucumber, Raw, With Peel
½ large - 8 1/4" long
Creme Fraiche
½ cup
Lemon Peel
1 tablespoon
Peppermint, Fresh
2 tablespoon
Cumin, Ground
¼ teaspoon

¼ teaspoon

Step 1
Dice the cucumber into tiny bite sized chunks. Add the diced cucumber to a mixing bowl along with the salt, mixing well to combine. Set to one side for 15 minutes to allow the cucumber to release any excess liquid.Step 2
Whilst the cucumber is resting, finely chop the mint and add to a mixing bowl along with the crème fraiche, lemon zest and cumin. Stir well to combine.Step 3
Drain any excess liquid from the diced cucumber and blot with kitchen paper to remove any further moisture and the salt.Step 4
Add the diced cucumber to the crème fraiche mixture and stir well to combine until completely coated. Refrigerate until ready to serve.
