Hamburger Or Ground Beef, 85% Lean
1 pound
Salt
¼ teaspoon
Black Pepper
⅛ teaspoon
Cumin, Ground
¼ teaspoon
Coriander Seed Ground Or Whole Dried
⅛ tsp
Onion Powder
⅛ teaspoon
Paprika
¼ teaspoon
Pepper Jack Cheese
½ cup, shredded

Step 1
Preheat an oven to 375 degrees. Mix all ingredients in a bowl so you have an evenly spiced meat mixture.Step 2
Form the meat into 1 ½-inch meatballs and place them on a sheet tray lined with aluminum foil or parchment paper. The original recipe here makes about 22 meatballs.Step 3
Bake the tray for 25 minutes - no rotating necessary!

I added 3 tb of mayo to the meat balls. Once browned added 1 can of enchala sause and topped with cheddar cheese. Baked until gooey. My non-keto family enjoyed it as regular tacos. Adds 2 net carbs for the sause.

Taco Tuesday!! Great flavor but will definitely kick up the spices next time. Cooked in a skillet, not meatballs so the boys could have tacos. We ate it as a taco salad. Everyone was happy 😎
