Keto Spicy BBQ Meatloaf

Do you like your meals with a hint of spice? Try this spicy Keto BBQ meatloaf for your next lunch, dinner, or meal prep recipe. First, you’ll make a homemade spicy BBQ sauce with tomatoes and chipotle peppers. The sauce is loaded with flavor and spices, as well as a dash of sweetness from Keto-friendly brown sugar. You’ll make a unique meatloaf blend with more spices and special Keto ingredients to add extra fat to your meal. Spread the spicy BBQ sauce over the meatloaf and then bake until done!

What type of BBQ sauce is Keto?

If you look at the ingredient list on most bottles of BBQ sauce at the grocery store, you’ll see a lot of added sugar. This Keto BBQ meatloaf recipe uses a homemade spicy BBQ sauce that only includes Keto-friendly sugar substitutes. This way, fewer net carbs are included in your whole meal. However, you may find some Keto BBQ sauces available in grocery stores that are sweetened with only stevia.

A note about making the BBQ sauce

The original recipe here should make about one cup total of Keto BBQ sauce. If you’re having trouble measuring small amounts of ingredients, you may increase the servings of sauce you make. However, make sure you store the leftover sauce in your refrigerator and only use the amount you need for the meatloaf. In other words, one slice of meatloaf should include about two teaspoons of BBQ sauce.

What are pork rinds?

Pork rinds are deep-fried pieces of pork skin. They’re extra-crunchy and taste a lot like bacon. When you grind pork rinds down into crumbs, you can use them just like breadcrumbs! However, these “breadcrumbs” don’t have any carbs. Use pork rinds as a filler in meatloaf to help bind the meat.

    Add whole tomatoes and their liquid to a large pot with whole, canned chipotle peppers. Add beef broth to the pot and cover the ingredients with a lid. Cook the ingredients until the pot is boiling, then continue boiling for about 10 more minutes. You want the tomatoes to soften and the chipotle peppers to re-hydrate.

    Take the pot away from the heat to cool for just a minute or two. Then, add all the contents of the pot to a blender or food processor. Blend the ingredients until you have a smooth liquid. If you have room in your blender, you can use it to blend in the apple cider vinegar, Worcestershire sauce, brown mustard, brown sugar, salt, pepper, paprika, chili powder, cumin, onion powder, and garlic powder.

    Pour your BBQ sauce back into the pot you used in step one. If you haven’t added the ingredients from step two yet, add them now. Whisk the ingredients over medium heat while the sauce comes to a simmer. Whisk the butter into the simmering sauce until it all melts.

    Cook the sauce while it bubbles and reduces to a thickened BBQ sauce. This may take another 15 minutes or longer. It will not get sticky like processed sauces made with a lot of sugar. This sauce will be velvety and thick enough to coat the back of a wooden spoon. Let the BBQ sauce cool entirely before you use it on the meatloaf - at least one hour. One hour has been included in the cooking time to account for this.

    When the sauce is done cooling, turn on your oven to preheat to 375 F (190 C). You’ll need to grind a bag of pork rinds in a blender or food processor, then weigh out the amount you’ll need for the recipe. Add the correct amount of ground pork rinds to a large mixing bowl along with ground beef, ground pork, and all the remaining ingredients listed. Mix together the ingredients to make your meatloaf blend.

    Spread your meatloaf mixture out in a loaf pan or other large metal baking pan sprayed with non-stick cooking spray. Spread the prepared spicy BBQ sauce entirely across the top of the meatloaf all the way to the edges. Cover the baking pan with aluminum foil, then bake the meatloaf for 1 hour. After baking, remove the foil, and cook the meatloaf uncovered under your broiler set to high heat for about 10 minutes. Then, your meatloaf is ready for slicing and serving.

    Used ground turkey instead of beef. Didn’t have peppers in adobo, so use diced tomatoes with green chilies. Added a dried red chili pepper. Had just the right amount of heat. Flavor was wonderful. Put in 2 loaf pans. Will freeze and it will make 4 meals of leftovers
