Low Carb Beef 'n' Cheddar Sandwich

Do you need a quick and simple lunch? This beef and cheddar bagel sandwich takes 10 minutes to heat up and assemble. Please note that you will need at least one already prepared bagel from the Carb Manager Bagel recipe. The bagel is dense and chewy, the roast beef is savory, and a mound of melted cheese is a tasty glue this dish needs!

  • Cheddar Cheese

    Cheddar Cheese

    ¼ cup, shredded

  • Step 1

    Preheat an oven to 350 degrees. Meanwhile, bring the beef broth to a strong simmer in a small pot. Place your sliced roast beef in the hot broth.

    Let the beef cook until they’ve darkened in color and become loose. This should only take about 60 seconds.

    Turn off the heat. Prepare a Carb Manager Bagel by slicing it in half and placing the open-faced slices on a baking tray. Use a spoon to pour some or all of the beef broth in the pot onto the bagels. Use as much broth as you’d like without making the bagels soggy.

    Arrange the beef evenly on both bagel slices. Put an equal amount of cheese on top of both bagel slices as well. Then, bake the sandwich in your oven for about 3 minutes - just enough time for the cheese to melt.

    This. Is. AMAZING! I made the batch of bagels (with everything bagel seasoning) just to make this sandwich and I think all 6 of the bagels from this batch are going to become these sandwiches! I have to say, when I saw the size on the bagels I thot I was going to need to eat 2 in order to be full but that would've been too much for my dinner when I made them. Surprisingly, one sandwich filled me up. The bagels are SO filling due to all the cheese in the bagel recipe, and then more cheese on top! Definitely worth making over and over!
