Keto Molho a Campanha

Molho a Campanha is a delicious Brazilian Keto recipe that lends itself well to Low Carb diets without any modifications. If you are familiar with pico de gallo, it is similar in that it is made using chopped tomatoes and onions. It is different however, because it includes chopped red and green bell pepper, olive oil, and vinegar instead of lime juice. Traditionally it is topped with chopped parsley and cilantro, which brings out the fresh flavors from all the chopped vegetables. Keto Molho a Campanha can be used as a topping for grilled meats like steaks, fish, and roasted chicken. It can also be used as a topping for feijoada.

What is the best type of tomatoes to use for this condiment?

You can use any whole type of tomato, like a Roma or beefsteak. We used cherry tomatoes for ours to give the dish a slightly different texture, in which case we cut them in half. As always, try to use organic tomatoes and bell peppers where possible, as these tend to be some of the highest in pesticides.

What is the best knife to use to prepare the vegetables?

The best knife to use is a very sharp chef's knife. A sharp knife will allow you to make very small dice on all the vegetables.

Why vinegar instead of lime juice?

Vinegar works to quickly pickle the vegetables helping to preserve their color and texture. You will love the crisp as well as the crunchy texture of this side dish.

Recipe Steps

  • Step 1

    Wash and then slice the cherry tomatoes in half. Then, cut off the sides of the bell peppers. Slice the bell pepper into julienne pieces first, then, dice the bell pepper into very small dice. Do the same with the onion. Peel the outside of the onion, then cut it in half. Cut the onion into julienne and then into small dice. Place all the vegetables in a medium-sized mixing bowl.

    Add in the vinegar, olive oil, salt, and black pepper. Stir the mixture well. Give it a taste to see where the flavors are.

    Add in more vinegar, salt, and pepper to taste. Top the condiment with chopped parsley and cilantro. Stir well.

    Place in the fridge until ready to serve. Serve chilled. Store leftovers in an airtight container in the refrigerator.

    I'm confused with Onion, app say not Keto friendly but lots of recipes contain it 🤔

      Yes, this can be confusing for some. It depends on your personal preference. Onion in large quantities is not Keto because it would be high in carbs. However, if you consume a small amount and the net carbs are still within your daily limits, you can definitely enjoy it on your Keto diet which gives some variety and makes Keto enjoyable.     Recipe sounds delicious. Recipe says 1 bowl has 1g net carb. If 3/4 cup of chopped tomatoes is 3g net carbs how can 1 bowl of recipe be only 1g net carb? What size is the bowl? I haven’t even added any of the other ingredients yet.

      Yes, you are correct; it makes 20 servings with 1 g net carb each. This is because this recipe is to be used as a condiment. The serving size is 0.8 oz. If you want to consume more, simply double or triple the serving you log into Carb Manager based on the number of carbs you are limited to each day.

      Look at the serving size for a “bowl”. It’s 0.8oz/22grams. There’s also 20 servings in the recipe. That’s not that much. That’s a few spoonfuls I’m guessing.
