Easy Keto Feta Chicken with Zucchini

Quick and easy Keto meals don't have to be boring and tasteless. This creamy chicken recipe with sauteed zucchini is a fantastic Greek-inspired recipe you must try! Tender chicken pieces with rich feta cheese flavor will impress even the picky eaters in the family. Sauteed zucchini pairs perfectly with this dish, but you can serve the chicken with your favorite fresh or sauteed vegetables of choice (peppers would be an excellent alternative). This recipe is a quick Keto dinner that will feed four people, but you can double the amounts to feed even more! Optionally, top everything with some more crumbled feta cheese and garnish with freshly chopped parsley or your favorite herbs! Enjoy!

How can you customize this easy Keto Feta Chicken with Zucchini?

If you don't have zucchini (or you don't like it!), you can easily swap it for other veggies of choice. As mentioned above, peppers or string beans would be an excellent alternative. You can also use some broccoli, asparagus, or even eggplant. Another way to customize this recipe is to replace the feta cheese with the same amount of fresh goat cheese and adjust the herbs and spices according to your taste.

  • Step 1

    Wash and pat dry the zucchini. Trim away the stem and the root part. Slice into thin rounds and season on both sides with salt, black pepper, and garlic powder.

    Heat one teaspoon of olive oil in a large pan over medium-high heat. Add the zucchini and cook for 2-3 minutes per side. Remove from the pan and set it aside.

    Cut the chicken breasts into bite-sized pieces. Finely chop the parsley. Crumble the cheese. Add the chicken, feta, parsley, and dried thyme to a bowl. Mix well to combine.

    Add the remaining olive oil to the same pan and heat up over medium heat. Add the chicken mixture and cook for 12-15 minutes, stirring constantly, until cooked through.

    Arrange the fried zucchini over serving plates and top with chicken. Optionally, season with some more salt or pepper to taste and garnish with more crumbled feta and finely chopped parsley. Enjoy!

    Really good, I was a little surprised just how good this tasted. I added just a little more feta on top. It was a good meal to get me back to my low carb eating after the holidays.

        More please! This meal was so good and I can't stress that enough. I made it last week during meal prep and I am going to make it again this week. Only thing I added was lemon juice and some mint. My husband loved it and told me the meal is a keeper. Definitely going to double the batch this time.
