Keto Spinach Pasta Dough

Try this easy Keto-friendly pasta recipe the next time you want to treat yourself to a Keto pasta meal or include some noodles in your meal prepping. This recipe is for the raw pasta dough only, and it does not include directions for cooking the pasta. However, some suggestions and tips are provided throughout the introduction and directions. A Keto egg pasta dough has fresh green spinach mixed into it for a healthier pasta dough in a fun shade of green. Expect the raw dough to be sticky, but it can be rolled thin to be cut into all sorts of pasta shapes. Roll and cut the dough into thin strips for linguine or fettuccine noodles. Cut the flat dough into squares and pinch them in the center to make bowtie pasta, or roll the dough into small balls for egg-drop noodles. Let other users know in the comments what you made with your spinach pasta dough!

Cooking Tips

After you make this Keto pasta dough recipe, you have the freedom to make any type of pasta you want. When rolling out the dough, use a Keto flour for dusting, such as fine-ground almond flour or a paleo baking flour mix. Roll the dough out between sheets of parchment paper so the dough doesn’t stick to your rolling pin. Also, make sure to keep the dough chilled at all times. Chill the dough in your refrigerator between rolling, cutting, shaping, and cooking the pasta.

Can I Meal Prep With This Recipe?

You can make the pasta dough, divide it into portions, and freeze it until you’re ready to use a serving. Always thaw any dough in your refrigerator 24 hours in advance of using it. You can also prepare the dough, cut and shape your pasta, and freeze the pasta to cook later. While this option takes more prep work in advance, all you have to do then is grab a handful of frozen pasta from your freezer and flash-cook it in a pot of boiling water when it’s time to cook.

  • Step 1

Fill a large pot with water and bring it to a boil on your stove. When the water is boiling, add whole spinach leaves. Boil the spinach for only about 60 seconds. Then, drain the water, and use a slotted spoon to transfer the spinach to an ice bath to halt the cooking process and cool it down. Leave the spinach aside temporarily while you prepare the dough.
    Step 1
  • Step 2

In a large mixing bowl, combine almond flour, xanthan gum, and salt. Stir the apple cider vinegar and egg yolks into the dry ingredients until you have a consistently crumbly, dry mixture. Remove the spinach from the ice bath and finely mince it on a cutting board. Place all the minced spinach in a cheesecloth or paper towel, and squeeze all the water out of the spinach until you’re left with a green pulp. Stir the spinach and water into the mixing bowl until you have a sticky green dough.
    Step 2
  • Step 3

Wrap the spinach pasta dough in plastic wrap, and gently press the dough into a flat disc or square to help it chill quickly. Chill the dough for 1 hour before using. You can roll the cold dough and cut it into your desired pasta shape. Boil cold noodles for only 30-60 seconds to prevent the noodles from falling apart in the water. Did the exact same recipe with the same amount of ingredients, didn’t work. Dough was too soft and sticky
