The pasta had to get ditched for this recipe, but you won’t be missing it when you spoon the traditional sauce over a juicy pork chop wrapped in crispy bacon. There’s plenty of sauce in this recipe for dipping your pork chop, so don’t hold back!

  • Step 1

    Lay two pork chops on a flat surface. Sprinkle the pepper evenly across the exposed sides. Then, wrap each chop in 3 pieces of bacon. Make sure the ends of the bacon are wrapped under the chop so it doesn’t unravel.

    Heat a skillet on medium-high heat. Place the wrapped pork chops in the skillet, and cover with a lid. Cook the chops for 6-7 minutes per side. The bacon should be golden and crispy, and the pork should be just cooked through so it is still very tender.

    Set the cooked pork chops aside to cool. Discard the pan drippings except for about 1 TB. Set this aside for later. Meanwhile, whisk together the egg, egg yolk, second amount of pepper, and parmesan cheese.

    Return the skillet to very low heat. Melt in the butter. Mince and stir in the garlic as well. Let the garlic cook in the butter for about 30 seconds.

    Turn off the stove heat. Gently whisk the heated butter mixture into the egg mixture. Continually whisk so the egg mixture heats through without scrambling the eggs.
  • Step 6

    For serving, plate the pork chops. Spoon a portion of the carbonara sauce over the chops, and leave the remaining sauce aside for dipping. Garnish with freshly chopped parsley and enjoy!

    I believe what the recipe was going for in the sauce should be more of a Hollandaise Sauce. Use 2 egg yokes and 1/2 tsp lemon juice. Do NOT put directly on heat or you will have scrambled eggs. When you add butter to the eggs make sure the butter is warm, not hot. High heat will destroy your sauce. You can make a garlic butter before hand but just make sure it has cooled a bit before adding. You can also add the parm but just do it at the end. Hope that helps some people.

      True carbonara consists of eggs and parmesan. Butter can be used at the beginning, but it's the egg yolk that makes it creamy.

    Sauce is not carbonara style. I ended up making it into a cheesy scrambled egg on the side. And glazed the bacon with balsamic-lakanto maple syrup mixture.

      medium-high burns the bacon and doesn't cook the pork all the way through.

        This recipe was delicious! I’ve made Pasta Carbonara many, many times so tempering the egg mixture is something I know how to do it which IS important- I did not use as much pepper as recipe calls for- I seasoned the pork chops with s & p and alittle garlic powder before wrapping them in the bacon. Browned them and put them on a sheet pan with asparagus for 10 minutes at 400. Also made zoodles to toss with carbonara sauce. I only used a few grinds of pepper not the 2 teaspoons.

          Is there really 2 tsp of pepper in the sauce for two servings? We are making it now and ours looks nothing like the pictures. Ours is very brown.

            Thanks for the reply. We tried it and there is way too much pepper and we didn’t even use the full 2tsp. We followed all instructions but ours sadly turned out to be brown paste. The taste wasn’t bad, But didn’t look appetizing and had an overwhelming taste of pepper, might try with ½ tsp pepper next time it just skip the sauce all together. We liked the pork.

          Made this recipe and the chops turned out very good, tender and tasty... didn't care much for the sauce so i didn't even try it but instead used the Cheddar Sauce listed here in another recipe (Keto Bacon Wrapped Chicken Thighs). The sauce is a keeper!!

          Cooked this for lunch today. I didn’t care for the sauce and can’t think of something to make it better so I won’t use the sauce for future lunch or dinner options.

                Thinking I'm going to take this a step further - I have some super thin cut chops from Costco - I think i'll take two, sandwich them with spinach, ricotta and parm cheeses, then wrap it in bacon and go from there. Give it some extra fat and then for sure, my chops won't be over cooked. (because these are crazy thin!). Awesome recipe!!!

                Love the pork chops but I wouldn’t even try the sauce as it basically looked like raw egg. I feel like milk/heavy cream was missing from this. Going to find a different sauce to use

                      This is now one of my top favorite keto meals! Some mentioned not caring for the sauce but I absolutely loved it. I will definitely be using it with other dishes and/or over vegetables. The chops were also great. Moist and flavorful. A+++

                        Just made this. I loved it! Wasn’t big on the sauce, but the pork chop was delicious. Next time I’m gunna cook it a little longer, cause bacon wasn’t that crispy. Thanks for the recipe

                          Was very good, didn't make the sauce with it, because of time constraints. We grilled these on our grill, gave it a better flavor than the stove.

                            I see NOW that I put the eggs into the butter/garlic.....hence the "scrambled egg" effect. Regardless it was tasty and I will make it again with the CORRECT mixing!

                                    Where do you use the TB of pan juices “held for later”?

                                      Hi there, The 1 TB of juices should be reserved IN the pan, which you use again in Step 4 for the sauce. Hope this helps!

                                    Just made this and everyone loves it. I accidentally switched the pepper so it was really spicy. I also couldn't get the sauce not to be clumpy with cheese even tho it didn't look good it tasted fantastic!!! I ate it with zoodles but served my husband linguine
