Our Keto Instant Pot Chicken Chili is perfect on a cold day and is great for leftovers too! The chili is not spicy, so it is suitable for the entire family and is high in protein and healthy fats. You will love our easy Keto Instant Pot Chicken Chili, which is made using tender chicken thighs, fresh green bell peppers, and aromatics like onions and garlic. The broth is seasoned with spices like ground cumin, paprika, and ground coriander. To make the broth creamy and to add fat, we have added tangy and smooth cream cheese that melts effortlessly into the soup. Cauliflower florets are added to give it texture and flavor. Feel free to add other low carb vegetables to the chili, like canned artichokes or celery.

What other kinds of toppings can I add?

Feel free to top the soup with other chili-compatible ingredients like shredded cheese, sliced black olives, hot sauce, diced white onion, and more! We have topped the chili with slices of ripe avocado and cilantro to keep things simple and easy.

What size Instant Pot do I need for this recipe?

We used a standard 6-quart Instant Pot for this recipe.

Do I have to use chicken thighs?

No, feel free to use boneless chicken breasts if you would like. If you make this swap, copy this recipe in the Carb Manager app and adjust it by eliminating the chicken thighs and substituting them with breast meat. Breast meat is higher in protein per ounce than thigh meat, so if you are counting macros, you will want to make this adjustment.

Do I need to make this in an Instant Pot?

Absolutely not! If you do not have an Instant Pot, place all the ingredients in a saucepan and cook it until the meat is tender. Once the meat is tender, add in the cream cheese and stir until it is melted. This method would be helpful if you need to make this recipe but do not own an Instant Pot.

What are the best kinds of peppers to use?

We have used green bell peppers in this recipe, but feel free to use spicy green peppers like anaheim or hatch chili peppers.

    Turn the Instant Pot onto the Saute function and wait until it says 'Hot.' Combine the diced green bell pepper, diced onion, and minced garlic in the bottom of the pot. Stir well for 1-2 minutes until the vegetables are translucent. Season them with ¼ tsp of kosher salt.

    Add in the raw chicken thighs and half of the chicken broth. Add in the spices (ground cumin, paprika, ground coriander) and one teaspoon of kosher salt. This step is for cooking the chicken thighs until they are tender so you can shred them later. Doing this step will also create a delicious broth! Close the lid and set the timer for 20 minutes.

    Once the time has passed, do a quick release and remove the lid. Add the cream cheese to the hot broth to allow it to start melting. Remove the chicken thighs and transfer to a cutting board. Shred the chicken into bite-sized pieces, then place the chicken back into the Instant Pot. At this point, add the cauliflower florets and the remaining chicken broth. Place the lid back on the pot and set the timer for 3 minutes.

    Once the time has passed, do a quick release. Taste the soup, adding more salt and pepper as needed. Sometimes the Instant Pot will evaporate too much water, and the broth will become too salty. To mitigate this, add some hot water to the broth if necessary.

    Divide the soup among the bowls. Top with slices of ripe avocado and chopped cilantro as desired. Serve hot!

      I used some cooked chicken and did it in a saucepan on the stove - I also added fresh chilli and some dried chilli flakes during cooking and a squeeze of lime at serving. It was delicious and I’ll be making it again yummy.

          I made this tonight and it was delicious. It turned out to be more of a soup with a similar flavor to chicken tortilla soup. I used chicken breast and topped it with spicy chicharones for some crunch. My husband, who is still a bit skeptical of Keto, really enjoyed it and went back for 3rds!

            I am not a chili person but my husband is. I made it according to the recipe but I left out the cilantro as neither myself nor my husband like that particular spice. It was easy and quick to make. It had more of a chicken and dumplings flavor but I will definitely be making it again. My husband spiced his up by adding chili powder and pepper.

              I replaced bell peppers with onion and celery and added Colby Jack cheese to the soup to melt as the finishing touch. My daughter and guests and I loved it and will make it again!
