Keto Mediterranean Chicken Skewers
Summer to me means grilling! The first thing that comes to mind is skewers because they are simple and work great to make ahead to take to work. I used a mediterranean seasoning on these that includes chili, oregano, rosemary and thyme which makes this so so delicious and fresh. This makes about 8 skewers so a serving size is about 2 skewers a piece.

Chicken Breast
3 medium breast
Chili Powder
¼ tsp
Garlic Powder
¼ tsp
Spices Thyme Dried
¼ tsp, leaves
Spices Oregano Dried
¼ tsp, leaves
Spices Rosemary Dried
¼ tbsp
Spices Coriander Seed
¼ tsp
Black Pepper
¼ tsp
Kosher Salt
½ teaspoon
Cauliflower
¼ large head
Green Bell Pepper
1 medium
Zucchini
1 medium
Olive Oil
2 tablespoon
Kosher Salt
½ teaspoon
Recipe Steps

Step 1
Soak skewers in water overnight to prevent them from burning on the grill.Step 2
Dice chicken into 1’ cubes. Place in a large mixing bowl and combine with all the dried spices including the black pepper and ½ t salt.Step 3
Cut the cauliflower into florets, the green bell pepper into 1” pieces and cut the zucchini in half and then into half moon shapes. Toss all the veggies in 2 T olive oil and ½ t salt.Step 4
Start skewering by alternating chicken, zucchini, bell pepper, cauliflower. I would also double up on chicken once in awhile if the pieces were on the smaller side.Step 5
Preheat a grill until it’s very hot. Place skewers on the grill and cook on each side for several minutes until the chicken is cooked through and the veggies have a nice char on them about 12-15 minutes. Serve hot!

Love it! Super easy and tasty. Loved the veggies. For those who don’t like “the hot” of the spices, the chili powder could be halved. Thanks

Very good. I didn’t feel like cauliflower so I used cherry tomatoes instead. This recipe is a keeper!
