Easy Vegan Keto Brownies

Vegan Keto desserts are usually easy to make, and they can taste fantastic! These brownies are exactly that - they smell and taste like the real thing. They are simple to make and don't require any special ingredients. Please note that the total preparation time includes the time needed to prepare the flax eggs, not your actual work. It is very important to cover the brownies after about 20 minutes of baking to prevent them from burning on top. However, make sure to tent the foil to allow the cake to grow. When done, cool the brownies completely before slicing them.

With just 5 grams of net carbs per serving, these brownies are a wonderful Keto dessert. When prepared with the right ingredients, vegan desserts can be a part of your Keto diet.

Can I use some other egg replacer?

Baking without eggs can be tricky, and we don't recommend using chia seeds or some other egg replacer for this recipe. The right amount of flax eggs will give you the best brownie texture and flavor.

    In a small bowl, mix three tablespoons of ground flaxseed with seven tablespoons of water. Stir well with a spoon until combined. Let the mixture rest for 10 minutes.

    Add the almond flour, cocoa powder, coconut flour, baking powder, and salt to a large bowl. Whisk until fully combined. Make sure to break up any lumps.

    Add the butter to a small, microwave-safe dish and microwave until completely melted. Transfer the melted butter to a large bowl and add the sweetener. Using a hand mixer with a whisking attachment, beat until fully incorporated.

    Add the flaxseed mixture and vanilla extract. Continue to mix until combined. This should take about 2-3 minutes.

    Now, add the dry mixture. Beat on a low-speed setting for about 1 minute. Increase the speed to medium-high and continue to beat for another 1-2 minutes, making sure not to overmix the dough. Optionally, stir in about 2-3 tablespoons of chocolate chips.

    Preheat the oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper. Transfer the dough to the pan and gently press with your hands to flatten the surface. Sprinkle with chocolate chips and bake for 20 minutes. Remove from the oven and cover it with foil. Bake for another 25 minutes.

    When done, remove from the oven and cool completely. Slice into 9 squares and serve. Cover the leftovers with plastic wrap and keep them on the counter for up to 3 days.
