Easy Keto Salmon Patties with Creamy Broccoli Mash

This protein-packed recipe is among our favorite Keto lunch ideas you can take with you to work. It's loaded with lots of essential nutrients, and, above all, it's delicious. You can fry or bake the salmon patties (depending on your preference); just remember to add a small amount of olive oil to the mixture – otherwise, it might be a little dry. You can replace the olive oil with the same amount of avocado oil for equal results. You can also add one small chili or your favorite hot sauce to the patties for some extra flavor. We prepared the broccoli mash with feta cheese, but you can substitute it for some cream cheese. Adding a small amount of grated parmesan is another great idea for a unique flavor you will surely love. Enjoy!

    Place the salmon in a food processor and process until you get small chunks. Slice the spring onions. Finely chop the parsley. Add the salmon, almond flour, spring onions, parsley, eggs, olive oil, garlic powder, ½ tsp salt, and black pepper to a bowl. Mix well to combine.

    Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper. Shape the mixture into 4 equal patties. Place on the prepared baking tray and bake for 20-25 minutes.

    Meanwhile, cut the broccoli into smaller florets. Add to a deep pot and pour in enough water to cover. Cook the broccoli until completely tender.

    Remove the broccoli from the heat and drain. Cool for 5 minutes and transfer to a food processor. Add the feta cheese, butter, and salt. Optionally, adjust the amount of salt according to your taste. Process until completely smooth.

    Divide the salmon patties and broccoli mash between your lunch boxes. Add the cherry tomatoes and optionally add some spring onions and lemon. Enjoy!

    I made the salmon patties for dinner tonight and they were awesome!! Even my son in law couldn’t tell the difference between these and regular salmon patties made with bread crumbs. I will definitely be making them again. Wonderful recipe.
