Step 1
Add the eggs to a mixing bowl with the salt and pepper and beat well to combine.Step 2
Roughly chop the tomatoes and slice the olives. Heat the oil in a skillet over a medium heat. Add the tomatoes, olives and capers and cook for a minute or two.Step 3
Add the beaten egg and allow it to settle for a minute. Use a wooden spoon and scramble the eggs together with the other ingredients, cooking through to preference.Step 4
Roughly chop the basil and fold through the eggs to serve.

Where do the carbs come from? My tomatoes have 0. Caper 0. Eggs 0 and olives 1 for 6 pieces
