Keto Tuscan Chicken

7 ratings

This recipe is a perfect choice if you're interested in the Mediterranean Keto diet. Tender chicken breasts are prepared in a beautiful creamy sauce with some shredded parmesan and spinach. It's a fantastic lunch or dinner option that will keep you full for hours. The dish can be served as it is, or alongside your favorite Keto-friendly sides, such as mashed cauliflower or fresh vegetables. It pairs perfectly with some sour cream or Greek yogurt. Although it takes a little extra time to prepare, this recipe is definitely worth it!

What is the Mediterranean Keto diet?

The Mediterranean Keto diet combines your regular Keto macronutrient targets with some ingredients commonly found within the Mediterranean diet, such as seafood, poultry, dairy products, low-carb vegetables, olive oil, nuts, and seeds.

How to store the leftovers? This lovely dish can be stored in the refrigerator for a couple of days. Store in air-tight containers until ready to serve.

Can I use some butter instead of olive oil?

Olive oil is typically used in most Mediterranean dishes. It's definitely a healthier option, but if you're not a fan of its unique flavor, feel free to replace it with the same amount of butter.

This was delicious. I served it to my family including my fussy eater Grandkids and they loved it. I served it with rice for those not watching their carbs

I added shitake mushrooms before the crab and broth were added ( I love mushrooms!), and it gave it a very nice flavor.

Make it in the instant pot- easy and just as quick - just add the heavy cream at the end.

That's exactly what I was just thinking. Could you offer some instructions on how you did it please? Thank you 😊
