Low Carb Beef Bulgogi Bowls

My favorite weeknight meals are the ones that are quick, easy, high in protein, and high in healthy fats. Bonus points if they include delicious ethnic flavors like these Korean inspired Keto Beef Bulgogi Bowls. You will love this Keto Asian recipe because it comes together in no time, but the flavor packs a punch. The recipe uses 85% ground beef, which is nice and fatty. The ground beef is sauteed with diced onion, garlic, and ginger. The entire mixture is seasoned with soy sauce, plum extract, and sesame seed oil. The final dish is garnished with toasted sesame seeds and sliced green onion. The seasoned ground beef is served over a bed of hot cauliflower rice. Since the cauliflower rice is already a vegetable, you can serve this as is but feel free to add other low-carb vegetables on the side.

Do I have to grate the onion, garlic, and ginger?

No, you can do a fine mince instead. However, grating the garlic and ginger will allow for more seamless integration of the flavors and also allow the flavors to be more robust. Not to mention it is a lot quicker than mincing.

What is plum extract?

The plum extract is made from green plums and is much more delicious than if you just used a sweetener. It is flavorful, fragrant, sweet, and mildly tangy. You can find plum extract at your local Asian market or on large online retailers like Amazon. If you're avoiding sugar at all costs, feel free to use sweetener instead. However, if you are on a low-carb diet the amount needed for this recipe is very small and won't affect the net carb count much.

    Heat a large nonstick skillet over medium-high heat until very hot. Add the avocado oil and swirl the pan. Add in the ground beef and begin to break it up with a wooden spoon or rubber spatula.

    While the meat is still raw, grate in the onion, garlic, and ginger. Mix well with a wooden spoon to incorporate the aromatics. Cook the beef halfway through.

    Once the aromatics are mixed in, add the soy sauce, plum extract, and sesame seed oil. Continue cooking the beef until it is fully cooked and glazed with the liquids.

    While the beef is cooking, heat the cauliflower rice according to package directions or according to the recipe above. Divide the cauliflower rice between the four bowls. Once the meat is cooked fully, top each bowl with ¼ of the beef mixture. Top each bowl with toasted sesame seed, sliced scallions, and sliced cucumbers. Serve immediately.
