Low Carb Sesame Seed Sandwich Bread
It’s nostalgic to bite into a slice of fluffy white bread, coated in a sesame seed crust. The only problem with the white bread loaves of our childhood is that they are all empty carbs and processed with added sugars. Boo! Keto or not, this is the best Keto bread recipe to replace sandwich bread. What makes the bread slices so fluffy is the addition of whipped egg whites, which make up about half the bread batter. You’ll notice the original recipe here makes just 2 servings. So much egg is needed, your typical kitchen stand mixer can’t hold much more than what is listed below. When the whipped egg whites bake in your oven, the air bubbles stay in place to keep your baked good risen and lightweight. That’s what all those tiny little holes are in your bread slices and what makes Keto bread and cakes fluffy and voluminous.
Variations On This Keto Bread Recipe
The sesame seeds in this sesame seed sandwich bread recipe give a toasty, slightly nutty flavor to the bread. They help cover up some of the egg taste and add a crunchy texture. You could swap the sesame seeds for another spice or herb at your discretion. Poppyseeds or crushed peppercorns could substitute. You could also add dried garlic or onion powder to the bread. Step 1
Preheat the oven to 325 degrees. In a mixing bowl, combine almond flour, coconut flour, baking powder, stevia, xanthan gum, salt, sesame seeds, and melted butter. Use a spatula to mix the ingredients together until you have a crumbly dough. Meanwhile, place all the egg whites and the cream of tartar in a stand mixer. Whip on high speed until you have stiffly whipped egg whites.Step 2
Use your spatula again to fold the whipped egg whites into the dry mixture in 3-4 additions. Fold gently and only just enough to combine the egg whites and dry mixture into a consistent batter. Your batter will reduce to about half the volume of the whipped egg whites as you fold. Pour the batter into a loaf pan lined with parchment paper, and very gently smooth the top of the batter over with the spatula. Be careful not to deflate the batter anymore.Step 3
Bake the loaf pan for 20 minutes. Then, remove from the oven and sprinkle the remaining sesame seeds over the top of the loaf. Gently fold a piece of aluminum foil over the pan, creating a vented tent. Return to your oven and bake for an additional 40-45 minutes.Step 4
Once done baking, use the parchment paper to pull the bread out of the pan and let it cool completely. This bread loaf will be about 2 inches tall. Slice the cooled loaf in half to make 2, 2-inch-tall squares. Slice both of those squares in half horizontally through the middle to create a total of 4 slices of bread - enough for 2 sandwiches.
