Tender chicken breasts are cooked in beautiful tomato sauce and topped with sliced mozzarella for a fantastic flavor you will love. The meat is then served with a deliciously creamy spinach side which is very easy to make. Add some freshly grated parmesan before serving to complete this fantastic lunch or dinner recipe!

We have decided to use sliced mozzarella for this recipe because it will melt perfectly over the meat. However, you can use any type of grated or sliced cheese to top the chicken breasts.

    Rinse and roughly chop the spinach. Heat the olive oil in a large pan over medium-high heat. Add the spinach and season with salt and pepper. Mix well and cook for 6-7 minutes or until wilted.

    Shred the parmesan cheese. Add the shredded parmesan, cream cheese, and garlic powder. Mix all well.

    Taste and optionally add some more salt or pepper. Pour in the heavy cream and stir well again. Continue to cook for another 10-12 minutes over medium-low heat.

    When done, turn off the heat and set it aside. If the spinach mixture is too thick, you can add more heavy cream. Optionally, you can stir in one tablespoon of Greek yogurt or sour cream.

    Heat the remaining olive oil over medium heat. Season the meat with red pepper flakes and add to the pan. Add the butter and cover with the lid. Cook for 20-25 minutes over medium-low heat. The meat should be fully cooked through.

    Remove the lid and add the tomato sauce. Add the garlic powder, oregano, and erythritol. Stir the sauce well. Thinly slice the mozzarella and arrange it over the meat. Cover again and continue to cook for 10-12 minutes or until the cheese melts.

    When done, taste the sauce and optionally add some salt or pepper to taste. Transfer to serving plates and serve with the prepared spinach. Optionally, sprinkle everything with some shredded parmesan before serving.
