Pair this recipe with fried eggs for a balanced, high-protein breakfast. Everything is cooked in one skillet, so you won’t need to worry about doing the dishes afterwards.
Tips for a perfect breakfast steak skillet:
• Use a tender beef cut like sirloin, top loin, or ribeye. We went with sirloin, but you can choose your preferred cut. Keep in mind that the fat content will differ accordingly. • Cook the steak bites in a hot pan. The caramelization will give more flavor and keep the meat juicy on the inside. • Cut the potatoes into small cubes to crisp up and cook quickly.
Can you replace the potato with another vegetable?
Potato is the perfect vegetable for carb cycling recipes because of its high carb content. You can add as much or as little depending on your daily allowed carbs. You can replace it with other high-carb veggies like sweet potatoes or cassava. If you aren’t interested in carb cycling breakfast recipes, you can replace the potatoes with low-carb veggies like cauliflower, celeriac, parsnip, or kohlrabi.

Avocado oil

Beef top sirloin steak

Potato
200 g
Onion, white, yellow or red, raw
0.5 medium - 2 1/2" diameter
Red pepper
0.5 large - 3" diameter x 3 3/4"
Garlic
2 clove
Oregano, ground
0.5 tsp
Paprika
0.5 tsp
Salt

Step 1
Cut the potatoes into 1 cm cubes, finely chop the onion and pepper, and mince the garlic. Cut the beef into bite-sized pieces. Add 1 tbsp of oil to a pan or skillet and place it over high heat.Step 2
Add the beef to the pan/skillet and toss for 2 minutes. Add half the amounts of oregano, paprika, salt, and black pepper and stir. Transfer the beef to a plate.Step 3
Drop the heat to medium-low and add the remaining oil. Add the potatoes and cook for 5 minutes, stirring occasionally. Add the pepper and onion and cook for 5 more minutes.Step 4
Once the potatoes are fork tender, add the minced garlic and the remaining seasoning. Cook for another minute until the garlic is fragrant. Return the steak bites to the pan and toss to combine.Step 5
Take the pan off the heat. Chop the parsley and sprinkle it on top. Serve immediately!
