These little meatballs are packed with flavor! They are a staple in my weekly meal prep. Simply mix the ground meat with a few other ingredients, then bake and broil! Serve these with pickled veggies, cucumber salad, or cauliflower rice. They are delicious topped with some sriracha!

Recipe Steps

  • Step 1

    Preheat the oven to 400 degrees fahrenheit. Mince the cilantro and green onion and add to a bowl. Use a microplane or grater to grate the garlic and ginger.

    Add the ground pork, soy sauce, erythritol, salt, rice wine vinegar and coconut flour to the bowl and mix.

    Form golf ball-sized meatballs and place them on a parchment covered tray. Bake at 400 degrees for 20 minutes.

    Turn on the broiler and broil them at 490 degrees for 30 seconds to 1 minute, or until the tops of the meatballs brown. Enjoy!

    Left out sugar sub an added a 1/4 cup of jalapeno, good stuff!!!

      So I added a pound of turkey to stretch, skipped the cilantro and sugar sub. (Didn’t have it ) but added lanko maple sugar instead and some red pepper flakes. I thought these were delish!! Little sauce would be great maybe cook In bacon grease then add chicken stock and all the other ingredients for a gravy and serve over cauliflower rice yum!

        I used the 1lb turkey and 1lb pork mix, I doubled all my other items. I didn't put any sugar or fake sugar in it, but I did put a 1/2 cup of sweet chili sauce in the mix. Everything else was as printed. It turned out really good. I used fresh cauliflower which I chopped up in to rice and the rest of the family used a Thai cucumber and carrot salad mixture

          I used 80% ground pork. Omitted the coconut flour. (I forgot it) Replaced half of the soy sauce with fish sauce. I also subbed parsley for the cilantro in case my kiddo thinks it tastes like soap. Gave it 5 stars as I feel the recipe would be good as written too. My 8 year old really loved this dish, so worth trying for a family friendly meal.

              So I tTried to re-create the recipe with a pound of lean turkey meat but it threw off the macros totally and made one serving 27 g of carbs I tried so many times to play around with the measurements and the servings and I still couldn’t figure it out so I’m just making this recipe with turkey can’t be much different just by adding turkey I wished carb manager allows you to edit the preset recipes that are already in the app if anybody knows please email me cam15909@aol.com

                Yummm! Family friendly meal, I mixed a roll of ground turkey with the pork to stretch the meat and doubled the spices. I made a gravy out of the drippings by adding broth and coconut flour served over cauliflower rice. :)
